<h2>Torta Caprese</h2>

<p>300 gr. Mandorle non sbucciate / <em>unpeeled almonds</em></p>
<p>220 gr zucchero / <em>sugar</em></p>
<p>250 gr burro / <em>butter</em></p>
<p>250 gr cioccolato fondente / <em>dark chocolate</em></p>
<p>5 uova / <em>eggs</em></p>
<p>1 pizzico di sale /<em> pinch of salt</em></p>
<p>Tostare le mandorle per 10 minuti in forno a 200°. Estrarle e farle intiepidire, poi passarle al mixer e tritarle grossolanamente. La ricetta originale usa solo le mandorle pelate e tostate. Io preferisco usare quelle con la buccia perché danno un arome migliore alla torta.</p>
<p><em>Toast the almond for 10 minutes in the oven at 200°. Take them out, cool down amd put them into the mixer and mince them. The original recipe uses peeled almond toasted and minced but I prefer this version.</em></p>

<p>Sciogliere il cioccolato fondente a bagno maria. Una volta sciolto aggiungere metà del burro.</p>
<p><em>Now melt the chocolate in a bain marie. Once melted, add the half of the butter and melt it down as well. </em></p>

<p>A parte sbattere i rossi con metà del burro e 180 gr di zucchero. Incorporare il composto di burro e cioccolato.</p>
<p><em>In a container put butter, the egg yolks and 180 gr of sugar and beat them well. Add the chocolate+butter mixture. Stir well.</em></p>

<p>Unire le mandorle tritate.</p>
<p><em>Now add the minced almonds.</em></p>

<p>Montare a neve gli albumi con un pizzico di sale e aggiungendo a pioggia lentamente lo zucchero avanzato. Quando ben fermi incorporarli, con un movimento lento e dal basso verso l’alto, al composto di cioccolato e mandorle.</p>
<p><em>Beat the egg whites with a pinch of salt adding slowly the sugar left while beating. When firm, add them to the mixtures above with a gentle movement going from the bottom to the top .</em></p>

<p>Mettere in una tortiera ca. 25 cm diametro precedentemente foderata di carta forno oppure bene imburrata e infarinata e cuocere per ca. 1H a 170°.</p>
<p>Una volta sfornata, fare raffreddare, sformare e spolverare di zucchero a velo.</p>
<p><em>Put in a cake tim (25cm diameter possibly coated with baking paper or coated with butter and flour) and put in the oven at 170° for 1 hour.</em></p>
<p><em>Once out and cold, turn out and spread icing sugar all over before serving.</em></p>
