<h2>Baklava</h2>

<p>Per i rolls / <em>for the rolls</em></p>
<p>500 gr pasta “fillo” / p<em>hyllo pastry</em></p>
<p>200 gr noci / <em>walnuts</em></p>
<p>100 gr pistacchi / <em>pistachios</em></p>
<p>100 gr mandorle / <em>almonds</em></p>
<p>1 cucchiaio di acqua di fiori d’arancio /<em> tablespoon orange blossom water</em></p>
<p>150 gr burro / <em>butter</em></p>
<p>2 cucchiai zucchero<em> / tablespoons sugar</em><br />
Per lo sciroppo /<em> for the syrup</em></p>
<p>250 gr zucchero / <em>caster sugar</em></p>
<p>2 cucchiai di miele d’acacia / <em>acacia honey</em></p>
<p>Limone (1 cucchiaino di succo) / <em>1 teaspoon lemon juice</em></p>
<p>1 cucchiaio di acqua di fiori d’arancio / <em>tablespoon orange blossom water</em></p>
<p>2 dl acqua / <em>water</em></p>
<p>Mettere tutta la frutta secca in un mixer, aggiungere 2 cucchiai di zucchero e 1 cucchiaio di acqua di fiori d’arancio. Tritare finemente tutto.</p>
<p><em>Put the fruits all together in a mixer, add 2 tablespoons of sugar and 1 tablespoon of orange blossom water. Mince them finely.</em></p>

<p>Fare sciogliere il burro. Srotolare la pasta fillo e prenderne un foglio, spennellarlo di burro fuso. Coprire con un altro foglio di pasta fillo. Spennellare di burro anche questo.</p>
<p><em>Melt the butter. Unroll the phyllo pastry take a sheet and brush it throughutly with the melted butter. Cover with another sheet. Brush with the butter as well.</em></p>

<p>Ora, prendere il composto di frutta secca e disporne un quantitativo sufficiente lungo una linea. Iniziare ad arrotolare pressando il più possibile e arrotolare . Ripetere questa operazione fino alla fine dei fogli di pasta.</p>

<p>Tagliare i rotoli in parti uguali di ca. 3 cm, metterli in verticale e pressarli un pochino con il palmo della mano. Disporre in una teglia da forno. Mettere in forno a 200° per circa 30 minuti. Se diventano troppo scuri coprire con un foglio di carta d’alluminio.</p>
<p><em>Cut the rolls in smaller rolls of 3 cm each. Now put them in vertical and press them gently with the palm of your hand. Put them in a baking pan. Brush with butter and put in the oven for 30 mins at 200°. If the get too brwon cover them with an aluminum foil.</em></p>

<p>Mentre sono in forno in una casseruola mettere lo zucchero rimasto, il miele, l’acqua a bollire. fare bollire a fuoco medio per ca. 7/8 minuti. Togliere dal fuoco e unire il limone e l’acqua di fiori d’arancio. Mescolare e fare raffreddare.</p>
<p><em>Meanwhile we prepare the syrup. Put the sugar left, the water and the honey in a casserole and take to boiling. Let simmer for 7/8 minutes. Switch off the fire and add the lemon juice and the orange blossom water. Stir and cool down.</em></p>

<p>Sfornare i baklava e ancora caldi unire lo sciroppo preparato poco prima. Unirlo tutto e lentamente. Lasciare raffreddare (i baklava assorbiranno tutto lo sciroppo). Si conservano fino a 2 settimane in frigo. Estrarli un paio d’ore prima di servirli.</p>
<p><em>Take the baklava out of the oven and still hot pour on to them the syrup. You must put all of it. The baklava will absorb all of it while cooling down. You can preserve them for 2 weeks in the fridge. Take them out a couple of hours before serving.</em></p>
