<h2>Tostones</h2>
<p>Qui torniamo indietro al 2006 quando, con la mia collega Paula, andai in Colombia &#8211; Barranquilla-  per la prima volta. Dappertutto servivano pietanze con questo &#8216;banano&#8217; fritto accompagnato da panna acida. Lo faccio nella ricetta che mi avevano passato i nostri amici del posto.</p>

<p><em>Here we go back to 2006 when I was for the first time in my life in Colombia &#8211; Barranquilla &#8211; with my colleague Paula. Everywhere we could taste this deep-fried &#8220;bananas&#8221; served with sour cream. I follow the recipe I was given by our local friends.</em></p>

<p>500 ml olio di semi d’arachide / <i>500 ml frying oil</i></p>
<p>Sale / <i>salt</i></p>
<p>Per accompagnare / <i>to serve:</i></p>
<p>100 gr panna acida / <i>100 gr sour cream</i></p>

<p>Scaldare l’olio in una casseruola.</p>
<p><i>Heat the oil in a casserole</i></p>
<p>Pulire i platani come nelle foto (tagliare gli estremi e sbucciarlo).</p>

<p>Tagliarlo a pezzi di circa 3 cm.</p>

<p>Friggere i pezzi poco alla volta finché non saranno dorati.</p>

<p>Mettere un pezzo alla volta di platano fritto tra due assi, premere le assi con forza e schiacciarlo. più premete più sarà sottile e quindi croccante.</p>
<p><i>Put one piece of deep-fried plantain in between 2 boards and push the two borads in order to make the chunk flat, press as much as you can: the thinner the crunchier.</i></p>

<p>Rifriggere il platano appiattito per altri 2/3 minuti finché non sarà croccante. Sgocciolare su carta assorbente. Salare e servire caldissimi. Ottimi accompagnati da panna acida.</p>
<p><i>Deep-fry the flattened plantain for other 2/3 minutes. Drain on paper towels. Season with salt and serve hot and crunchy. Great with some sour cream.</i></p>
