<p>500 gr Mascarpone</p>
<p>10 cucchiai zucchero</p>
<p>5 uova</p>
<p>3 cucchiai di caffe solubile sciolto in 250 ml acqua</p>
<p>200 gr di amaretti secchi</p>
<p>&nbsp;</p>
<p>Sbatti i rossi con 5 cucchiai di zucchero (metti i bianchi in un altro recipiente), finché sono gialli pallido e molto soffici; unire il mascarpone poco alla volta.</p>

<p>Sbattere i bianchi a neve con un pizzico di sale. Unire gradualmente gli altri 5 cucchiai di zucchero. Devono essere fermissimi e duri.</p>

<p>Unire i bianchi montati al composto di rossi e zucchero. E’ la parte più delicata che va fatta con molta calma e con un cucchiaio di legno con un movimento lento dal basso verso l’alto. Prenditi il tempo che occorre il rischio è di smontare i bianchi.</p>

<p>Mettere un cucchiaio di composto sul fondo degli stampini. Immergere gli amaretti rapidamente nel caffè e metterli negli stampini. Coprire con altra crema di mascarpone.</p>

<p>750 ml latte</p>
<p>6 uova</p>
<p>1 rosso d’uovo</p>
<p>150 gr zucchero</p>
<p>30 gr cacao amaro</p>
<p>200 gr amaretti secchi</p>
<p>caramello</p>
<p>150 gr zucchero</p>
<p>1 bicchierino di rhum</p>
<p>&nbsp;</p>
<p>Portare il latte in ebollizione e togliere dal fuoco. Farlo intiepidire.</p>
<p>Mettere lo zucchero in una casseruola e senza mai mescolarlo, lasciarlo fondere finché non raggiunge un colore nocciola. Versarlo nello stampo rettangolare.</p>

<p>Metterli in un recipiente con lo zucchero e il cacao e mescolare bene.</p>

<p>Unire le uova una alla volta.</p>

<p>Mettere lo stampo in una teglia più grande che riempirete d’acqua (il Bonet si cuoce a bagno-maria). Coprire il Bonet con dell’alluminio, praticando prima un foro al centro per consentire al vapore di uscire.</p>

<p>Cuocere a 180° per 45 minuti.</p>

<p>Sformarlo quando è ancora tiepido. Conservare in frigorifero e servire fresco a fette.</p>
