<p>150 gr zucchero</p>
<p>100 gr farina di pistacchi di Bronte*</p>
<p>10 gr gelatina in fogli</p>

<p>* o pistacchi interi da tritare nel macina caffè</p>

<p>Ammollare i fogli di gelatina in acqua fredda.</p>

<p>Sbattere i rossi con lo zucchero finché non saranno schiumosi e pallidi.</p>

<p>In una casseruola unire latte e la farina di pistacchi. E portare ad ebollizione.</p>

<p>Versare il latte ancora bollente sui rossi montati e mescolare bene,</p>

<p>Rimettere il composto sul fuoco e continuare a mescolare, e portare il composto a 70° o finché non inizia a sobbollire. Leggermente sui lati estremi della crema a contatto con i bordi della casseruola. Togliere dal fuoco.</p>

<p>Unire i fogli di colla di pesce ammollati e mescolare fino a scioglimento. Lasciare raffreddare.</p>

<p>Versare nelle mono porzioni (8) o nello stampo unico.</p>

<p>Porre in frigorifero per almeno 4 ore.</p>
<p>Per sformare, immergere il fondo dello stampo un contenitore con acqua calda e rovesciare sul piatto da portata (aiutarsi con un coltello per incidere il bordo).</p>
