<p>40 pezzi</p>
<p>30 minuti + 7 ore riposo</p>

<p>150 g cioccolato fondente grattugiato</p>
<p>200 g di zucchero semolato</p>
<p>250 g di farina di mandorle</p>
<p>mezzo cucchiaino di cannella macinata</p>
<p>1 pizzico di chiodi di garofano macinati</p>
<p>2 bianchi d’uovo</p>
<p>1 o 2 cucchiai di kirsch</p>

<p>Mescola gli ingredienti secchi. Unisci i bianchi d’uovo non montati e il kirsch. Impasta con una forchetta prima e poi con le mani. Si formerà una palla piuttosto compatta. Fai riposare in frigorifero per 2 ore circa.</p>

<p>Stendi su un ripiano un foglio di carta forno e poni al centro l’impasto, copri con un altro foglio di carta forno di pari dimensioni e con un mattarello appiattisci fino ad ottenere uno spessore di poco meno di 1 cm. Togli la carta forno e con gli stampini a stella o a cerchio taglia i biscotti; procedi così fino a esaurimento della pasta.</p>
<p>NOTA: immergere gli stampini in zucchero per decorare i bordi dei biscotti.</p>

<p>Metti i biscotti su una leccarda coperta di carta forno e lascia riposare per circa 6/7 ore all’aria. Scalda il forno a 180°C e inforna per 6/7 minuti massimo.</p>

<p>Nel frattempo sciogliere a bagno maria il cioccolato fondente (senza che l’acqua bolla).</p>

<p>In una piccola cesseruola fondere il burro e farlo spumeggiare finché il siero spumoso non si separa. Fare intiepidire e togliere il siero con un colino.</p>
