<p>200 g di zucchero a velo</p>
<p>250 g di farina di mandorle</p>
<p>2 bianchi d’uovo</p>
<p>1 cucchiaino di succo di limone</p>
<p>1 cucchiaino di cannella macinata</p>

<p>Preriscalda il forno a 150° C. In un contenitore inizia a montare i bianchi d’uovo, finché non iniziano ad essere semiliquidi e spumosi; unisci il succo di limone e monta fino a che saranno fermi e sodi.</p>
<p>Unisci ora, sempre sbattendo, lo zucchero a velo poco alla volta. Il composto sarà abbastanza compatto e lucido.</p>

<p>Add the ground almonds and the cinnamon to the reminaing mixture. Mix well.</p>
<p>Unisci alla parte restante la farina di mandorle e la cannella. Mescola bene; il composto sarà una palla compatta. Lascia riposare per circa 45 minuti in frigorifero.</p>

<p>Stendi su un ripiano un foglio di carta forno e metti al centro la palla, copri con un altro foglio di carta forno di pari dimensioni e con un mattarello appiattisci fino ad ottenere uno spessore di circa mezzo centimetro. Togli la carta forno e con gli stampini taglia i biscotti; procedi così fino a esaurimento della pasta.</p>

<p>Metti i biscotti su una leccarda coperta di carta forno e con un pennello spennellali con la meringa tenuta da parte (se necessario aggiungi alcune gocce d’acqua per renderla più liquida).</p>

<p>Inforna per circa 12-15 minuti. Fai raffreddare e conservare i biscotti in scatole di latta (fino a 2 settimane).</p>
