<p>500 gr bucatini</p>
<p>200 gr guanciale o pancetta a strisce</p>
<p>1/2 cipolla*</p>
<p>350 gr polpa di pomodoro</p>
<p>olio d’oliva</p>
<p>peperoncino</p>
<p>pecorino grattugiato</p>
<p>sale</p>
<p>1/2 cucchiaino di zucchero</p>
<p>* cipolla:  la ricetta originale non la vorrebbe ma io la preferisco così.</p>

<p>Tritare la cipolla e soffriggerla con un po’ d’olio. Unire i cubetti di pancetta e fare cuocere per 8/10 minuti finché non diventa dorata.</p>

<p>Unire il pomodoro, il peperoncino, il sale e 1/2 cucchiaino di zucchero. Cuocere per 15 minuti circa a fuoco medio basso finché non restringe un pochino.</p>

<p>Nel frattempo cuocere la pasta.</p>

<p>Versarla nella padella con la salsa, saltare a fuoco vivo per un paio di minuti e servire.</p>
