<p>Eccoci di nuovo nella tradizione koreana.</p>
<p>I Japchae sono degli spaghetti tiepidi che si servono come accompagnamento in un pasto.</p>
<p>Si tratta di vermicelli fatti con le patate, saltati con verdure (sempre in un corretto equilibrio di colori: verde, bianco, rosso e giallo) e uova.</p>
<p>Tutti gli ingredienti sono saltati separatamente e assemblati da freddi agli spaghettini caldi, poco prima del servizio.</p>

<p>Pronti in 40 minuti</p>
<p>&nbsp;</p>
<p>100 gr cipolle affettate grossolanamente</p>
<p>100 grammi di carote a filangé</p>
<p>100 gr di zucchine a filangé</p>
<p>100 gr di funghi a fette</p>
<p>1 spicchio d’aglio tritato</p>
<p>150 gr di spaghettini di patate (in  assenza anche di soia o riso)</p>
<p>2 uova</p>
<p>olio di semi di arachidi q. b.</p>
<p>sale</p>

<p>Salsa:</p>
<p>4 cucchiai di salsa di soia</p>
<p>un cucchiaino di zucchero</p>
<p>2 cucchiai di olio di sesamo</p>

<p>Saltare con un filo di olio e separatamente tutte le verdure (e salarle), lasciarle intiepidire e tenerle da parte. Le verdure si possono anche preparare prima e conservare.</p>

<p>Separare i rossi e i bianchi d’uovo, batterli leggermente separatamente con una forchetta e  semrpe separatamente cuocerli a frittata in una padella unta.</p>
<p>Tagliare quindi a listelli da 1cm di larghezza.</p>

<p>Ora cuocere gli spaghetti in acqua bollente (come da indicazioni – circa 8/10 minuti), scolarli e nel colapasta sciacquarli rapidamente con acqua fredda.</p>

<p>Nel frattempo preparare la salsa mescolando gli ingredienti indicati.</p>

<p>Scaldare 2 cucchiai di olio, e soffriggere l’aglio tritato per 30 secondi, gettarvi la pasta e saltarla a fuoco medio per 1 minuto. Unire la salsa e saltare per altri 2 minuti. Togliere dal fuoco e unire tutte le verdure e i listelli di uova. Mescolare bene e servire.</p>
