<p>L’ossobuco più buono del mondo lo fa la Luisa (mia madre). Non so come ma ha una predisposizione naturale nel preparare cibi milanesi, e non fallisce mai.</p>
<p>Qui sotto la sua ricetta per l’ossobuco (una ricetta perfetta che non eccede in verdure e in pomodoro), che ho tradotto e associato alla coda di rospo, il pesce che si comporta come una carne. La gremolada è il sapore che più di tutti mi porta indietro nella mia infanzia e la trovo una delle invenzioni culinarie più semplici e perfette che ci siano.</p>
<p>&nbsp;</p>
<p>4 fette di coda di rospo da 200 gr cadauna</p>
<p>2 scalogni</p>
<p>60 gr di burro + altri 20 gr</p>
<p>3 cucchiai di olio EVO</p>
<p>farina bianca q.b.</p>
<p>mezzo bicchiere vino bianco</p>
<p>500 ml di brodo di carne o vegetale</p>
<p>1 cucchiaio di doppio concentrato di pomodoro</p>
<p>sale e pepe</p>
<p>&nbsp;</p>
<p>Gremolada:</p>
<p>30 gr di prezzemolo</p>
<p>scorza di un limone (solo la parte gialla)</p>
<p>1 spicchio d’aglio</p>
<p>&nbsp;</p>
<p>&nbsp;</p>
<p>Sciogliere il burro e l’olio assieme. Unire gli scalogni e l’aglio tagliati a metà (non tritati). Lasciare soffriggere per un paio di minuti.</p>

<p>Infarinare le fette di coda di rospo e adagiarle nella padella.</p>

<p>Cuocere per 2 minuti per parte finché non saranno dorati, estrarre e tenere in forno a 180° C per altri 10 minuti. Nel frattempo tirare la salsa.</p>
<p>Irrorare il soffritto con il vino, lasciare evaporare per 4 minuti. Unire quindi il brodo vegetale e il concentrato di pomodoro. A fuoco medio lasciare ridurre la salsa a metà.</p>

<p>Nel frattempo tritare gli ingredienti per la gremolada e mescolarli assieme.</p>

<p>Impastare i 20 gr di burro con un cucchiaino di farina (si formerà una pallina), immergete la pallina nella salsa, mescolare e farla sciogliere.  Lasciare bollire per un paio di minuti (la salsa si addenserà).</p>

<p>Togliere dal fuoco, filtrare rapidamente. Impiattare il pesce e irrorarlo con la salsa.</p>

<p>70 gr zucchero a velo</p>
<p>per servire: panna liquida</p>

<p>Pre riscaldare il forno a 160° C.</p>
<p>In un recipiente mettere tutti le farine e il lievito e mescolare.</p>

<p>Impastare prima con una forchetta poi con le mani. Avvoglere n pellicola e  lasciare riposare mezz’ora.</p>
