<p>900 gr zucchero</p>
<p>il succo di 2 limoni</p>
<p>1 lt acqua</p>
<p>180 gr maizena</p>
<p>1 cucchiaino e mezzo di cremor tartaro</p>
<p>4 cucchiai di acqua di rose (or 1 cucchiaio di essenza di rose)</p>
<p>un pizzico di colorante rosso</p>

<p>300 gr zucchero a velo</p>
<p>80 gr maizena</p>
<p>&nbsp;</p>
<p>Foderare una tortiera rettangolare (30&#215;20) con carta da forno.</p>

<p>Unire lo zucchero, il succo di limone e 400 ml d’acqua in una casseruola dal fondo pesante, portare ad ebollizione e lasciare sobbollire finché non raggiunge i 115° C.</p>

<p>Nel frattempo in una casseruola stemperare la maizena con l’acqua restante e il cremor tartaro. Porre sul fuoco e portare ad ebollizione finché non si rapprende. Usate un cucchiaio di legno (il composto diventerà piuttosto compatto). Mettere da parte.</p>

<p>Unire ora lo zucchero a 115, poco alla volta, al composto di maizena. Incorprare bene aiutandovi anche con un frullino elettrico in caso.</p>

<p>Rimettere questo composto di nuovo sul fuoco e lasciare sobbollire per circa 45 minuti (per togliere l’acqua in eccesso), o finché il colore sarà dorato e brillante. Sciogliere un pizzico di colorante nell’acqua di rose. Unirlo al composto e lasciarlo evaporare ancora per circa 10 minuti.</p>

<p>Togliere dal fuoco e ancora calda versarla nella tortiera foderata. Lasciare raffreddare completamente per 5 o 6 ore (meglio se tutta la notte).</p>

<p>Mescolare lo zucchero a velo e la maizena. Sformare e tagliare a cubetti da circa 1 cm e mezzo di lato.  Passare quindi i cubetti nel composto di zucchero e maizena e coprirli abbondantemente con lo stesso. Conservare in scatole di latta con (per massimo 7/8 giorni) o servire.</p>
