<p>800 gr passata di pomodoro</p>
<p>2 spicchi d’aglio</p>
<p>30 gr basilico fresco</p>
<p>mezzo bicchiere di olio d’oliva</p>
<p>sale e pepe</p>
<p>1 cucchiaino di zucchero</p>
<p>300 gr mozzarella</p>
<p>150 gr parmigiano grattugiato</p>

<p>Preparare la salsa di pomodoro. Soffriggere l’aglio con metà dell’olio d’oliva.</p>

<p>Unire il pomodoro, il sale, il pepe e lo zucchero. Lasciare sobbollire semi- coperto a fuoco basso per 15-20 minuti.</p>

<p>Togliere dal fuoco e unire il restante olio e il basilico. Mescolare e tenere da parte.</p>

<p>Tritare la mozzarella grossolanamente.</p>
<p>Una volta che gli gnocchi sono cotti, versarli mano a mano in una pirofila.</p>
<p>Condirli con il pomodoro mescolando bene.</p>

<p>Spolverare di parmigiano e mescolare.</p>

<p>Bollire le patate con la buccia in abbondante acqua salata. Ci vorrà mezz’ora circa, controllate la cottura con un coltello (se penetra e arriva facilmente dall’altra parte sono cotte). Lasciare intiepidire.  Pelarle e schiacciarle con lo schiacciapatate in un contenitore.</p>

<p>Formare con le mani dei rotoli di circa 1,5/2 cm di diametro tagliarla a pezzi della stessa dimensione e con il pollice farli scorrere con gentilezza sui rebbi di una forchetta.</p>

<p>Disporre su un canovaccio pulito e aciutto cosparso di abbondante farina.</p>
<p>Per cuocerli: versare gli gnocchi aiutandosi con il canovaccio in abbondante acqua salata (aggiungete un cucchiaio d’olio d’oliva prima di immergerli, aiuterà a tenerli staccati). Mescolare con gentilezza e scolarli con una schiumarola mano a mano che vengono a galla.</p>

<p>250 gr semolino</p>
<p>1 l latte</p>
<p>100 gr burro</p>
<p>120 gr parmigiano</p>
<p>sale, pepe e noce moscata</p>
<p>3 rossi d’uovo</p>

<p>Portare il latte a ebollizione con 50 gr di burro, un pizzico di sale, la noce moscata e il pepe.</p>

<p>Quando in ebollizione, unire il semolino aiutandovi con una frusta per evitare grumi.</p>

<p>Cuocere per 2-3 minuti finché non si addensa. Unire 60 gr di parmigiano e i tre rossi d’uovo, uno alla volta.</p>

<p>Stendere su una leccarda unta d’olio e poi, prima con le mani, poi con un mattarello, appiattire l’impasto fino a circa 8 mm di altezza.</p>

<p>Con una formina circolare (o un bicchiere), tagliare quanti cerchi possibili. Disporli nella teglia (o nelle mini-teglie a piacere).</p>

<p>Coprire con alcuni fiocchi di burro e spolverare di parmigiano. Infornare per 20 minuti a 200° C e finché non sono gratinati.<em> </em></p>
