<p>Ispirata dal ristorante Hillstone di New York che la serve con chips di tortilla messicane. Questa versione è forse – perdonerete qui la mia immodestia &#8211; più buona dell’originale. Hehe.</p>
<p>&nbsp;</p>
<p>400 gr spinaci lessati e strizzati</p>
<p>200 gr di carciofi puliti e lessati</p>
<p>1 cipolla</p>
<p>2 spicchi di aglio</p>
<p>200 gr panna acida</p>
<p>1 cucchiaio di farina 00</p>
<p>200 gr di formaggio filante (cheddar, fontina, etc)</p>
<p>100 gr di pecorino grattugiato</p>
<p>50 gr di parmigiano grattugiato</p>
<p>un bicchiere di latte</p>
<p>1 cucchiaino di peperoncino macinato</p>
<p>sale e pepe</p>
<p>Olio EVO</p>

<p>Tritare grossolanamente i carciofi. Tritare gli spinaci. Affettare finemente la cipolla, tritare l’aglio e soffriggerli con 3 cucchiai di olio EVO finché non la cipolla non sarà traslucida. Unire la farina e incorporare bene.</p>

<p>Quindi unire i carciofi, il peperoncino e gli spinaci e lasciare cuocere per 3 minuti mescolando di continuo. Unire quindi il latte (in caso aggiungerne un pochino), e portare ad ebollizione finchè la consistenza non sarà cremosa.</p>

<p>Unire la panna acida e tutti i formaggi e lasciarli fondere a fuoco dolcissimo. Quando saranno completamente sciolti servire con tortilla chips.</p>
