<h2>Maiale al Latte / Pork Tenderloin with Milk Sauce</h2>
<p>Per 6 persone</p>
<p>1h e mezza</p>
<p>&nbsp;</p>
<p>2 filetti di maiale da 350 gr l’uno ca.</p>
<p>2 carote</p>
<p>1 gambo di sedano</p>
<p>1 cipolla</p>
<p>2 spicchi d’aglio</p>
<p>4 cucchiai d’olio d’oliva</p>
<p>mezzo bicchiere di vino bianco</p>
<p>2 cucchiai di farina</p>
<p>sale e pepe</p>
<p>&nbsp;</p>
<p>30 gr di burro</p>
<p>30 gr farina</p>
<p>130 ml latte</p>
<p>&nbsp;</p>
<p>Salare e pepare i filetti, infarinarli leggermente con i due cucchiai di farina.</p>
<p>Scaldare i 4 cucchiai d’olio in una casseruola e soffriggere la carne per 8/10 minuti finché non sarà croccante e dorata. Mettere da parte.</p>

<p>Nello stesso olio soffriggere per una decina di minuti tutte le verdure tritate finemente.</p>

<p>Quando pronto, rimettere la carne e insaporire per 5/6 minuti.</p>

<p>Unire il vino e fare evaporare bene.</p>

<p>Ora unire acqua fino al limite della carne, salare e lasciare cuocere per circa 40 minuti.</p>

<p>Controllare la cottura con una forchetta: Infilzate la carne se esce siero trasparente è ancora da cuocere se non esce nulla è pronta.</p>
<p>Togliere la carne e frullare la salsa. Tenere da parte.</p>

<p>In una piccola casseruole sciogliere il burro, unire la farina mescolando e cuocere un paio di minuti.</p>

<p>Aggiugnere la salsa e il latte.</p>

<p>Portare ad ebollizione, e una volta raggiunta lasciare sobbollire per 2/3 minuti (questo farà cuocere la farina e addensare la salsa).  Se necessario aggiungere del latte per averla più liquida.</p>
