<p>1 bianco d’uovo</p>
<p>260 gr zucchero</p>
<p>125 gr miele</p>
<p>100 gr acqua</p>
<p>50 gr sciroppo di glucosio</p>
<p>150 gr pistacchi o nocciole (o entrambi)</p>
<p>&nbsp;</p>
<p>zucchero a velo (q.b.)</p>
<p>&nbsp;</p>
<p>Tostare i piastcchi o le nocciole nel forno caldo (a 180° C) finché non saranno dorate.</p>

<p>Montare il bianco d’uovo aggiungendo circa 30 grammi di zucchero., finché non sarà ben sodo e fermo, mantenere la planetaria in funzione nell’attesa degli sciroppi.</p>

<p>In una casseruola dal fondo pesante mettere lo zucchero restante, lo sciroppo di glucosio e l‘acqua e portare ad ebollizione. Monitorare la temperatura e portare a 155° C.</p>

<p>In un’altra casseruola portare ad ebollizione il miele finché non raggiunge i 130°.</p>

<p>Unire il miele a filo molto lentamente, al bianco d’uovo (sempre sbattendo).</p>
<p>Ora unire lo zucchero a 155° C, a filo e sempre lentamente.</p>

<p>Continuare a montare finché non sarà intiepidito. Unire infine i pistacchi e/o le nocciole.</p>

<p>Nel frattempo foderare uno stampo rettangolare (20&#215;15 cm) con carta da forno. Spolverare di zucchero a velo il fondo dello stampo e versare il composto ottenuto. Con le mani leggermente unte dargli forma rettangolare (o pressare nello stampo). Impacchettare con carta forno e lasciare raffreddare completamente e riposare per almeno 10/12 ore prima di tagliare.</p>
