<p>2 gambi di sedano</p>
<p>1 cipolla</p>
<p>1 carota</p>
<p>100 gr di champignon</p>
<p>2 cucchiai di olio EVO</p>
<p>30 gr di burro</p>
<p>800 gr di carne trita mista (manzo, vitello e/o maiale)</p>
<p>pangrattato q.b.</p>
<p>100 gr di ketchup + extra</p>
<p>1 uovo</p>
<p>sale e pepe</p>

<p>Affettare finemente carote, funghi, sedano e cipolle. Scaldare olio e burro assieme e saltare le verdure per 5 minuti, unire quindi i funghi e cuocere finché non saranno teneri, salare e lasciare intiepidire.</p>

<p>Versare le verdure in un contenitore e unire la carne, le uova, la ketchup e il resto degli ingredienti, impastare con le mani unendo pangrattato q.b. finché non si formerà un composto compatto e omogeneo.</p>

<p>Foderare uno stampo da plum cake regolare con carta forno e versarvi il composto di carne.</p>

<p>Infornare a 170° per circa 1 ora, spennellando di tanto in tanto con ketchup.</p>

<p>Estrarre dal forno e lasciare intiepidire prima di servire.</p>

<p>Servire accompagnato da salsa Gravy*</p>
<p>1 cipolla</p>
<p>25 gr burro</p>
<p>25 gr farina 00</p>
<p>50 ml vino bianco</p>
<p>250 ml brodo di carne</p>
<p>100 gr di funghi affettati finemente</p>
<p>2 cucchiai di olio EVO</p>
<p>latte (se necessario)</p>
<p>Affettare sottilmente la cipolla e soffriggerla con 2 cucchiai di olio EVO. Unire i funghi e saltare a fuoco vivace per 4 o 5 minuti o finché l&#8217;acqua non sarà evaporata.</p>
<p>A parte sciogliere il burro e unire la farina, mescolare finché non diventerà un bel colore nocciola. Unire il vino bianco e il brodo e portare ad ebollizione. Lasciare sobbollire per 2 minuti, estrarre dal fuoco e unire i funghi saltati a parte. Mescolare e lasciare intiepidire (qualora fosse troppo densa diluire con un pochino di latte).</p>
