<p>300 ml panna</p>
<p>100 ml di latte</p>
<p>3 zucchine medie</p>
<p>200 gr chèvre</p>
<p>50 gr parmigiano grattugiato</p>
<p>pepe</p>
<p>1 pasta brisée</p>
<p>&nbsp;</p>
<p>Facoltativo:</p>
<p>100 gr di ricotta salata grattugiata</p>

<p>Come per la quiche lorraine, fare cuocere la base <em>‘au blanc’ </em>qui: http://www.eatwithmarco.com/index.php/quiche-lorraine/</p>
<p>Saltare le zucchine con un filo d’olio fino a che non diventano dorate e metterle da parte.</p>

<p>Sbattere le uova con la panna, il parmigiano, il latte e un pizzico di pepe.</p>

<p>Nella base cotta e intiepidita, mettere la ricotta salata, le zucchine e versare il composto di panna e uova, coprire con le fette di chèvre.</p>

<p>1 base pasta brisée</p>
<p>400 ml panna liquida</p>
<p>200 ml latte</p>
<p>3 uova</p>
<p>1 rosso d’uovo</p>
<p>sale e pepe</p>
<p>150 gr pancetta a cubetti</p>
<p>1 cipolla (facoltativa)</p>
<p>150 gr emmenthal grattugiato</p>

<p>Foderare una tortiera di misura adeguata con la pasta. Riempire di ceci secchi (questo eviterà la formazione di bolle), e cuicere in bianco. Dopo circa 25 minuti estrarre la pasta e togliere i ceci e terminare la cottura finché la pasta non sarà color nocciola.</p>

<p>Nel frattempo, in una padella, saltare il bacon in cubetti finché non diventa dorato e croccante e togliere. Nella stessa padella con un filo d’olio fare soffriggere la cipolla tagliata a fette sottili. Un volta pronte metterle nello stampo di pasta cotta nel quale avrete già aggiunto il formaggio.</p>

<p>In un contenitore ora unire latte, panna sale e pepe, e le uova e sbattere con una frusta finché tutto non sarà miscelato. E versare questo composto sugli ingredienti di cui sopra.</p>

<p>Infornare per circa 45/50 minuti a 170°. Se diventa troppo scura abbassate la temperatura.</p>
