<p>1 pizzico di zafferano</p>
<p>3 cucchiai olio EVO</p>
<p>200 gr di passata di pomoro</p>
<p>finocchietto selvatico fresco (1 ciuffo)</p>
<p>120 gr di pecorino grattugiato</p>
<p>350 gr malloreddus</p>
<p>&nbsp;</p>
<p>* in alternativa salsiccia normale a cui si aggiunge un cucchino di semi di finocchio (in aggiunta a quello richiesto dalla ricetta)</p>

<p>Soffriggere la cipolla nell’olio EVO.</p>

<p>Unire la salsiccia (e i semi di finocchio extra), e lasciare rosolare per 7/8 minuti o finché il liquido in eccesso non sia sfumato.</p>

<p>Bagnare con il vino bianco e lasciare evaporare completamente.</p>

<p>Unire quindi la salsa di pomodoro e mezzo bicchiere di acqua.</p>

<p>Lasciare sobbollire a fuoco medio per una decina di minuti finché la salsa non si sarà addensata. Aggiungere quindi lo zafferano e il finocchietto selvatico tagliato grossolanamente. Lasciare insaporire un paio di minuti, aggiustare di sale e togliere dal fuoco.</p>

<p>Cuocere la pasta.</p>
<p>Nel frattempo, tagliare i porri a rondelle e saltarli con olio d’oliva in una padella.</p>

<p>250 gr salsiccia</p>

<p>150 gr pane grattugiato</p>
<p>2 cucchiai di farina</p>

<p>2 cucchiai di cipollotto tritato</p>

<p>Portare ad ebollizione abbondante acqua e immergervi 4 uova. lasciarle bollire per 7 minuti (il tuorlo deve restare liquido), estrarle e immergerle in acqua fredda.</p>
<p>Nel frattempo impastare la salsiccia con il pepe, un uovo e 2 cucchiai di pane grattugiato (e il cipollotto).</p>

<p>Sgusciare le uova. Dividere l’impasto di salsiccia in 4 parti uguali e avvolgere le uova con questo, cercando di mantenere la forma dell’uovo (con le mani bagnate questo procedimento è molto più semplice).</p>
