<p>2 melanzane</p>
<p>4 coste di sedano</p>
<p>1 spicchio d’aglio</p>
<p>mezzo bicchiere di aceto bianco</p>
<p>4 cucchiai di olio extra vergine di oliva</p>
<p>sale e pepe</p>
<p>facoltativo: olive kalamata snocciolate</p>

<p>Protare acqua ad ebollizione e salare. Nel frattempo, sbucciare e tagliare a cubetti da 3 cm di lato circa le melanzane. Bollirle per 8/9 minuti o finché non saranno leggermente morbide (attenzione a non cuocere troppo o diventeranno troppo molli).</p>

<p>Scolarle in un colapasta e, ancora calde, bagnarle dentro lo scolapasta con l’aceto (a me piacciono aspre, se preferite un sapore più delicato usate metà dell’aceto). Lasciare intiepidire.</p>

<p>Pulire e tagliare a pezzi da 1 cm circa il sedano (usare anche le foglie). Tritare lo spicchio d’aglio. In un recipiente unire le melanzane, il sedano fresco, l’aglio, l’olio d’oliva e se desiderate le olive. Mescolare bene, aggiustare di sale e pepe e servire.</p>

<p>350 gr di maccheroncini</p>
<p>4 zucchine</p>
<p>3 acciughe o 2 cm di pasta d’acciughe</p>
<p>2 spicchi d’aglio</p>
<p>Mezzo bicchiere d’olio d’oliva</p>
<p>100 gr pecorino grattugiato</p>
<p>peperoncinno tritato a spiacere</p>
<p>500 ml olio di semi d’arachidi</p>

<p>Scaldare l’olio per friggere.</p>
<p>Tagliare le zucchine in pezzi di max 2 cm.</p>

<p>Friggere le zucchine nell’olio finché non saranno dorate. Mettere da parte.</p>

<p>Portare acqua ad ebollizione. Nel frattempo soffriggere in una pentola con l’olio d’oliva, l’aglio (a pezzi o tritato), le acciughe (o la pasta d’acciughe) e unire le zucchine fritte per insaporire. Mettere da parte.</p>

<p>Cuocere la pasta secondo le indicazioni.</p>
<p>Una volta cotta, unire la pasta appena scolata e saltare a fuoco vivace per un paio di minuti. Servire solverando di pecorino garttugiato.</p>

<p>1 kg cavolfiore/broccoli/etc</p>
<p>100 gr acciughe</p>
<p>150 gr pecorino grattugiato</p>
<p>mezzo bicchiere di vino rosso</p>
<p>1 spicchio aglio</p>
<p>mezzo bicchiere d’olio d’oliva</p>
<p>pangrattato q.b.</p>
<p>&nbsp;</p>
<p>Pulire il cavolfiore e le altre verdure e tagliare i fiori cercando di tenerli interi il più possibile. Versare metà dell’olio d’olia sulla base di una pirofila da forno. Aggiungere pane grattugiato, qualche acciuga, un poco di aglio tritato e sale.</p>

<p>Ora distribuire uno strato i cavolfiori. E ripetere il passaggio uno (pangrattato, acciughe, aglio e sale).</p>

<p>Continuare finché il cavolfiore non è finito. Aggiungere l’olio d’oliva rimasto. E il vino.</p>

<p>Coprire con carta d’alluminio e mettervi sopra un peso. Cuocere in forno per circa 35 minuti. Lasciare raffreddare per 10 minuti.</p>
