<p>Ok letta così sembrerebbe una parolaccia, ma chiamarli fagottini croccanti non suona lo stesso. Ebbene sì, qui la ricetta per rifare i Sofficini, ma fatti in casa eh! Pochi ingredienti semplici e genuini per un risultato che non vi deluderà.</p>

<p>Per ca. 10 pezzi</p>
<p>Pronti in 1 ora</p>
<p>&nbsp;</p>
<p>Impasto:</p>
<p>150 gr di farina 00</p>
<p>250 gr di latte</p>
<p>un pizzico di sale</p>
<p>30 gr di burro</p>
<p>&nbsp;</p>
<p>Ripieno I:</p>
<p>80 gr di prosciutto cotto</p>
<p>100 gr di formaggio a pasta filante</p>
<p>&nbsp;</p>
<p>Ripieno II:</p>
<p>50 gr di passata di pomodoro</p>
<p>100 gr di formaggio a pasta filante</p>
<p>&nbsp;</p>
<p>Per finire:</p>
<p>200 gr di pangrattato</p>
<p>100 gr di farina</p>
<p>2 uova</p>
<p>500 ml olio di semi di arachide</p>
<p>&nbsp;</p>
<p>In una casseruola portare ad ebollizione il latte con il burro e un pizzico di sale.</p>

<p>Quando bolle unire la farina tutta in un colpo e mescolare vigorosamente con un cucchiaio di legno. Lasciare intiepidire un pochino poi impastare a mano su un ripiano per 3 o 4 minuti. Fare una palla e chiuderla in pellicola trasparente. Portare a temperatura ambiente.</p>

<p>Stendere con un mattarello ad una altezza di circa 1 mm. Con un coppapasta (o una tazza), da circa 12/14 cm di diametro, tagliare dei cerchi e farcirli con il ripieno a piacere.</p>

<p>Battere leggermente le uova. Passare i sofficini quindi nella farina, poi nell’uovo battuto e infine nel pangrattato.</p>

<p>Scaldare in una pentola l’olio a portarlo a 180° C. Friggere i sofficini per 1 minuto e mezzo per lato. Lasciare sgocciolare e riposo per 3 minuti su carta assorbente prima di servire.</p>
