<p>200 gr chorizo (o spianata calabrese)</p>
<p>500 gr di panna liquida</p>
<p>1 scalogno</p>
<p>un terzo di bicchiere di vino bianco</p>
<p>1 bustina di zafferano</p>
<p>2 cucchiai di olio EVO</p>
<p>&nbsp;</p>
<p>250 gr di riso rosso selvatico</p>
<p>&nbsp;</p>
<p>400 gr di calamari puliti</p>
<p>3 cucchiai di Olio EVO</p>
<p>mezzo cucchiaino di pepe nero</p>
<p>&nbsp;</p>
<p>Cuocere il riso in abbondante acqua salata.</p>

<p>Tritare lo scalogno e soffriggerlo in 2 cucchiai di olio EVO.</p>

<p>Aggiungere il chorizo (o la spianata), tagliato a cubetti piccoli e lasciare soffriggere a fuoco medio basso per circa 8/10 minuti.</p>

<p>Alzare il fuoco e unire il vino. Lasciare evaporare completamente.</p>

<p>Unire quindi infine lo zafferano, la panna e riportare ad ebollizione.</p>

<p>Trasferire in una ciotola e frullare con un frullatore ad immersione. Filtrare con un colino e tenere in caldo.</p>

<p>Nel frattempo tagliare i calamari ad anelli (o a pezzi più piccoli qualora i calamari fossero grossi). Scaldare l’olio, unire il pepe e saltare i calamari per 4/5 minuti (non oltre altrimenti perdono in morbidezza). Salare.</p>

<p>Comporre il piatto: con un coppapasta formare delle tortine di riso rosso pressando bene, adagiare sopra i calamari e sul perimetro versare la salsa. Servire.</p>
