<p>Pronta in 40 minuti</p>

<p>4 fette di lonza di maiale (da 3 cm di altezza ciascuna)</p>
<p>100 gr di farina</p>
<p>2 uova</p>
<p>200 gr fiocchi di panko*</p>
<p>1 cavolo cappuccio piccolo</p>
<p>sale e/o salsa tonkatsu*</p>
<p>mezzo litro di olio di arachidi per friggere</p>
<p>&nbsp;</p>
<p>*Sono facilmente reperibili negli international foodstore.</p>
<p>Tagliare finemente il cavolo e metterlo in abbondante acqua fredda. Lasciarlo in ammollo fino a poco prima di servire. Mettete del ghiaccio se l’acqua non è abbastanza fredda<em>.</em></p>
<p>La carne deve essere a temperatura ambiente. Incidere la carne sui bordi, e praticare tagli trasversali sulla superficie.</p>

<p>Salare la carne, in seguito passarla nella farina, poi nell’uovo appena battuto a cui va aggiunto un cucchiaio di olio. Infine passare il tutto nei fiocchi di panko.</p>

<p>Friggere in abbondante olio portato a 180° C (e mantenuto costante a questa temperatura), friggere per 1 minuto da un lato, girarlo delicatamente e friggere per un altro minuto.</p>
<p>Estrarre dall’olio e poggiarlo per 4 minuti su una griglia a scolare (rivolto sul fianco se poggiato su un ripiano). Il calore assorbito continuerà la cottura dolcemente mantenendo la carne morbida.</p>
<p>Procedete così con le altre fette.</p>

<p>Trascorsi i 4 minuti ripetere l’operazione e friggere nuovamente la carne per un altro minuto per lato. Estrarre dall’olio, lasciare a riposo altri 3 minuti poggiato su un fianco prima di tagliare a listelli da circa 1 cm e mezzo e servire accompagnato con il cavolo filangé.</p>
