<p>2 cucchiai cannella macinata</p>
<p>1 cucchiaio scorza di arancio grattugiata</p>

<p>670 gr zucchero</p>
<p>1 cucchiaio e mezzo di lievito</p>
<p>un pizzico di sale</p>
<p>360 ml olio di semi</p>
<p>6 uova</p>
<p>90 ml di succo di un’arancia</p>
<p>1 bustina di vanillina</p>

<p>Sbucciare le mele e tagliarle prima a spicchi e poi a fettine. Metterle in un contenitore e unire la cannella, la buccia d’arancia e lo zucchero. Mescolare bene e mettere da parte.</p>

<p>Accendere il forno a 180°. Imburrare e infarinare uno stampo per ciambella grande.</p>
<p>Mescolare tutti gli ingredienti secchi (farina, zucchero, lievito, sale e vaniglia) in un recipiente.</p>

<p>In una ciotola unire uova, olio e succo d’arancia, sbattere e amalgamare bene.</p>

<p>Unire il lentamente composto liquido a quello ‘secco’ amalgamando bene con una frusta.</p>

<p>Ora aggiungere le mele scolate dal loro succo.</p>
<p>Versare nella tortiera e informare per 1H e 30 minuti almeno (controllate con uno stuzzicadenti &#8211; uscirà umido sempre per la presenza delle mele ma non ci devono essere creme).</p>

<p>Farcitura:</p>
<p>1 cucchiaio di cannella macinata</p>
<p>succo di mezzo limone</p>
<p>100 gr di zucchero</p>
<p>1 pizzico di sale</p>
<p>60 gr di burro</p>
<p>30 gr maizena</p>
<p>facoltativo: mezzo cucchiaino di noce moscata</p>

<p>Sbucciare le mele e tagliare in 10/12 spicchi uguali. Mettere le mele in un recipiente, unire lo zucchero, il sale, la cannella (e la noce moscata). Lasciare riposare a temperatura ambiente per almeno 30-40 minuti.</p>

<p>In un recipiente mettere la farina, il sale e lo zucchero. Unire il burro ancora freddo.</p>

<p>Iniziare a lavorare il tutto con le mani rompendo il burro con forza. Dopo qualche minuto l’impasto inizierà a fare grossi grumi. Unire ora, poco alla volta e sempre impastando l’acqua fredda finché non si formerà una palla abbstanza soda.</p>

<p>Prenderne 3/5 dell’impasto (mettere in frigorifero il resto), e stenderla tra 2 fogli di pellicola trasparente (questo vi eviterà di romperla quando la trasferite nella tortiera).</p>

<p>Togliere la pellicola sopra e rovesciare l’impasto steso nella tortiera e foderarla.Togliere a questo punto anche l’altro foglio di pellicola. Mettere in frigorifero per mezz’ora.</p>

<p>Accendere il forno a 200°.</p>
<p>Unire il burro e farlo sciogliere. Ora, le mele avranno rilasciato parecchio liquido, filtrarlo e metterlo in una piccola casseruola. Farlo bollire finché non si addenserà parecchio (quasi caramellizzato).</p>

<p>Versare le mele ora nella tortiera foderata. Stendere la pasta rimanente e coprire le mele.</p>

<p>Tagliare le mele a metà, sbucciarle e togliere il torsolo.</p>

<p>Mettere lo zucchero nella teglia con 2 cucchiai d’acqua e fare caramellare sulla fiamma. Togliere dal fuoco e aggiungere il burro, mescolare bene.</p>

<p>1 kg di mele</p>
<p>150 gr zucchero</p>
<p>150 gr farina</p>
<p>1 uovo</p>
<p>un pizzico di sale</p>
<p>1 bustina di lievito</p>
<p>latte q.b.</p>

<p>Sbattere l’uovo con lo zucchero finché non è montato. Unire la farina e 1 bicchiere scarso di latte e il lievito. Dovrebbe essere un composto piuttosto liquido e cremoso.</p>

<p>Versare in una tortiera imburrata e infarinata.</p>

<p>200 gr zucchero</p>
<p>1 cucchiaino di cannella</p>

<p>Per il crumble:</p>
<p>375 gr farina</p>
<p>200 gr burro (a temperatura ambiente)</p>
<p>150 gr zucchero</p>

<p>Tagliare le mele a tocchetti. Unire zucchero e cannella e mescolare. Versare nella teglia foderata di carta forno.</p>

<p>Mettere gli ingredienti per il crumble in un recipiente. Impastare dapprima con le dita e continuare a sbriciolare la pasta. il caldo delle mani farà fondere il burro e si formeranno dei grumi che si possono compattare facilmente.</p>

<p>Informare a 160° per 45 minuti o finché sui bordi non si creano delle piccole bollicine e il crumble sopra non è color nocciola. Se diventa troppo scura coprire con un foglio di alluminio.</p>
