<p>1 kg patate</p>
<p>1 cipolla</p>
<p>5 uova</p>
<p>sale</p>
<p>400 ml olio di semi di arachidi</p>
<p>&nbsp;</p>
<p>Scaldare l’olio in una casseruola.</p>
<p>Tagliare le patate a cubetti. Friggere le patate per 15 minuti circa. Sgocciolare l’olio in eccesso in uno scolapasta o con un canovaccio.</p>

<p>In una padella invece saltare le cipolle con 2 cucchiai di olio finché non saranno traslucenti. Sgocciolare in un colapasta.</p>

<p>In un recipiente battere leggermente le uova con il sale.</p>

<p>Unire le patate e la cipolla e mescolare.</p>

<p>In una padella (max 22 cm diametro) scaldare 2 cucchiai di olio e versarvi il composto.</p>

<p>Cuocere a fuoco medio-basso per circa 12/13 minuti.</p>
<p>Girare la tortilla aiutandosi con un coperchio. A padella coperta, girare rapidamente su se stessa la pentola e fare scivolare la tortilla nella pentola. Cuocere altri 7 minuti. Servire.</p>

<p>600 gr farina ‘0’</p>
<p>60 gr olio di semi</p>
<p>1 cucchiaino colmo lievito per torte salate</p>
<p>200 gr circa acqua tiepida</p>
<p>1/2 cucchiaio di sale</p>

<p>Versare in un contenitore la farina, l’olio, il sale e il lievito. Iniziare ad amalgamare con le dita, aggiungere l’acqua poco alla volta (la quantità necessaria dipenderà dal grado di umidità della farina), aggiungetene poco alla volta fino a che il composto sarà morbido ed elastico e non si attaccherà alle dita. Se avete esagerato con l’acqua, compensate con un po’ di farina (e viceversa).</p>

<p>Avvolgere in pellicola e porre in frigorifero per 2 ore prima di usare.</p>

<p>Dividere l’impasto in 10 parti uguali. Stenderle col mattarello finché non saranno sottilissime.</p>

<p>Cuocerle su una piastra o una padella antiaderente. Cuocere per 40 secondi per parte. Attenzione a non cuocerle troppo altrimenti si seccano e diventano croccanti. Impilarle in un piatto e mantenerle sempre coperte con un coperchio (l’umidità le mantiene morbide e arrotolabili).</p>
