<p>150 gr di fagioli cannellini lessati</p>
<p>4 fette di pane casereccio</p>
<p>2 spicchi d’aglio</p>
<p>olio extra vergine d’oliva (q.b.)</p>

<p>Lavare e tagliare il cavolo nero tenendo le foglie separate dai gambi.</p>

<p>In una casseruola soffriggere uno spicchio d’aglio con un cucchiaio di olio. Aggiungere i gambi e saltare per 5/6 minuti. Aggiungere un bicchiere d’acqua e lasciare sobbollire per 15 minuti.</p>

<p>Unire le foglie, aggiungere un altro bicchiere d’acqua e lasciare cuocere per circa 30 minuti (o finché la verdura non sarà tenera). Aggiustare di sale.</p>

<p>Tostare il pane in forno caldo (200°C) o nel tosta pane, estrarlo e sfregare sul pane l’altro spicchio d’aglio. Adagiare su ogni fetta una parte di cavolo stufato, un cucchiaio di fagioli cannellini e condire con un filo d’olio evo e una grattata di pepe nero.</p>

<p>4 cucchiai di olio extra vergine di oliva</p>

<p>facoltativo: olive kalamata snocciolate</p>

<p>Protare acqua ad ebollizione e salare. Nel frattempo, sbucciare e tagliare a cubetti da 3 cm di lato circa le melanzane. Bollirle per 8/9 minuti o finché non saranno leggermente morbide (attenzione a non cuocere troppo o diventeranno troppo molli).</p>

<p>Scolarle in un colapasta e, ancora calde, bagnarle dentro lo scolapasta con l’aceto (a me piacciono aspre, se preferite un sapore più delicato usate metà dell’aceto). Lasciare intiepidire.</p>

<p>Pulire e tagliare a pezzi da 1 cm circa il sedano (usare anche le foglie). Tritare lo spicchio d’aglio. In un recipiente unire le melanzane, il sedano fresco, l’aglio, l’olio d’oliva e se desiderate le olive. Mescolare bene, aggiustare di sale e pepe e servire.</p>

<p>400 gr di formaggio Gouda o Monterey Jack grattugiato</p>
<p>50 gr di jalapenos in aceto</p>
<p>3 cucchiai di olio di semi</p>

<p>Ungere una pentola con olio di semi e scaldare.</p>
<p>Stendere la pasta in cerchi di 20/25 cm di diametro.</p>

<p>Mettere nella padella. Farcire metà della tortilla con il formaggio e con qualche peperoncino. Rivoltare la tortilla e farne una mezza luna. Cuocere entrami i lati per 3/4 minuti a fuoco vivace.</p>
<p>Questa è la versione più basica e veloce ma le potete farcire a vostro piacimento (pollo arrostito avanzato, verdure grigliate, etc&#8230;).</p>

<p>Pulire le zucchine e scavare la polpa.</p>

<p>Scaldare l’olio in una pentola e unire le acciughe.</p>

<p>Quando sono sciolte, unire la polpa delle zucchine e i capperi. Cuocere per 7/8 minuti a fuoco vivace.</p>

<p>Unire i pomodorini tagliati a metà. Cuocere per altri 7/8 minuti e mettere da parte.</p>

<p>Nel frattempo cuocere le zucchine svuotate a secco in forno  caldo (200° C) per 15 minuti. O alternativamente n abbondante acqua salata per 10 minuti.</p>
<p>Aggiungere al composto di zucchine il formaggio, il parmigiano e la feta sbriciolata.</p>

<p>Farcire con questo composto le zucchine e cuocere in forno per 30 minuti a 190°-200° C finché non saranno ben gratinati. Servire.</p>
