<p>300 gr feta</p>
<p>200 gr pomodorini</p>
<p>3 filetti d’acciuga</p>
<p>20 capperi</p>
<p>3 cucchiai di pane grattugiato</p>
<p>2 cucchiai di parmigiano grattugiato</p>
<p>3 cucchiai olio d’oliva</p>
<p>&nbsp;</p>
<p>Pulire le zucchine e scavare la polpa.</p>

<p>Scaldare l’olio in una pentola e unire le acciughe.</p>

<p>Quando sono sciolte, unire la polpa delle zucchine e i capperi. Cuocere per 7/8 minuti a fuoco vivace.</p>

<p>Unire i pomodorini tagliati a metà. Cuocere per altri 7/8 minuti e mettere da parte.</p>

<p>Nel frattempo cuocere le zucchine svuotate a secco in forno  caldo (200° C) per 15 minuti. O alternativamente n abbondante acqua salata per 10 minuti.</p>
<p>Aggiungere al composto di zucchine il formaggio, il parmigiano e la feta sbriciolata.</p>

<p>Farcire con questo composto le zucchine e cuocere in forno per 30 minuti a 190°-200° C finché non saranno ben gratinati. Servire.</p>

<p>6/7 zucchine medio-grandi</p>
<p>80 gr pane grattugiato</p>
<p>60 gr parmigiano</p>
<p>2 spicchi d’aglio (o 1/2 cipolla)</p>
<p>10/12 pomodorini</p>
<p>15 capperi sotto sale</p>
<p>olio q.b.</p>
<p>sale e pepe</p>

<p>Lavare le zucchine tagliarle per la lunghezza. Scavarle con un cucchiaino fino a lasciarle 2 o 3 mm di buccia.</p>

<p>Ora mettere le zucchine scavate in una teglia, coprire con un filo d’olio, sale e pepe e infornare per circa 20 minuti (per ammorbidirle un pochino) a 200°. Estrarre dal forno e mettere da parte.</p>

<p>A parte fare soffriggere l’aglio (o la cipolla), mettere la polpa delle zucchine e fare saltare un paio di minuti. Salare e pepare. Unire i pomodorini tagliati a pezzi. Cuocere finché non si asciuga l’acqua di cottura.</p>

<p>A parte mettere la polpa saltata in padella in un recipiente, unire tutti gli ingredienti (i capperi tritati grossolanamente), mescolare, salare e pepare se serve.</p>

<p>Farcire ora le zucchine con il composto. Rimettere nella teglia. Coprire con un filo d’olio a crudo, pepe e infornare per circa 30 minuti a 200°.</p>

<p>La ricetta è ottima se fatta in combinata con melanzane (che andranno cotte assieme alle zucchine) e peperoni, farciti con lo stesso composto.</p>
