<p>650 gr carne trita di vitello / <em>650 gr veal meat</em></p>
<p>mezza cipolla / <em>half onion</em></p>
<p>3 foglie di salvia / <em>3 sage leaves</em></p>
<p>2 cucchiai pane grattugiato / <em>2 tbs bread crumbles</em></p>
<p>3 cucchiai parmigiano / <em>3 tbs parmesan</em></p>
<p>2 uova / <em>2 eggs</em></p>
<p>sale e pepe / <em>salt and pepper</em></p>
<p>1/2 bicchiere vino bianco / <em>half glass white wine</em></p>
<p>1/2 bicchiere di latte / <em>half glass milk</em></p>
<p>olio e burro / <em>oil and butter</em></p>
<p>foglie di 1 verza / <em>leaves of 1 cabbage</em></p>
<p>SALSA/<em>SAUCE</em></p>
<p>400 gr polpa pomodoro / <em>400 gr canned tomato sauce</em></p>
<p>1/2 cipolla / <em>half onion</em></p>
<p>olio / <em>olive oil</em></p>
<p>1/2 cucchiaino zucchero / <em>half tbs sugar</em></p>
<p>sale e pepe / <em>sale and pepper</em></p>
<p>Pulire la verza e togliere le foglie. Scottarle per un paio di minuti in abbondante acqua salata. Sgocciolare bene e fare raffreddare.</p>
<p><em>Clean the cabbage and take off the leaves. Dip them into boiling water, once the water start to boil again let cook for for 2/3 minutes. Drain them and let cool down.</em></p>

<p>A parte fare un soffritto di cipolla e salvia e rosolarvi la carne. Bagnare con mezzo bicchiere di vino bianco (ma trattenerne un paio di cucchiai) e fare evaporare bene. Salare, pepare e mettere da parte.</p>
<p><em>Meanwhile fry the chopped onion and the sage. Add the meat and let the meat juices evaporate. Pour the white wine (retain a couple of tbs) and let evaporate as well. Add salt and pepper and set aside.</em></p>

<p>In un mixer unire la carne, e tutti gli altri ingredienti tranne la verza (il pane va bagnato con un pochino di latte) e tritare fino ad ottenere un composto morbido.</p>
<p><em>In a food processor put the cooked meat and all other ingredients (the bradcrumbs have to be drenched with some milk). B</em><em>lend until the mixture is soft and smooth.</em></p>

<p>Aprire le foglie di verza, farcirle con un cucchiaio abbondante di composto e arrotolare come mostrato nella foto.</p>
<p><em>Take one leave of cabbage, open it spread and put a bog tbs of meat mixture. Close and roll as shown in the pictures.</em></p>

<p>Disporre in una pirofila, aggiungere un filo d’olio, qualche fiocco di burro, aggiungere 3 cucchiai di vino bianco e infornare a 200° per 30 minuti. A metà cottura, girarli e bagnare con mezzo bicchiere di latte. Girarli di nuovo 5 minuti prima di estrarre dal forno.</p>
<p><em>Put into the oven dish, add some olive oil, some small pieces of butter, the wine you kept aside and put into the oven for ca. 40 minutes at 200°. At half cooking turn each rool upside-down and add half glass of milk. Turn the upsdie down 5 minutes before taking the off from the oven.</em></p>

<p>Servire accompagnati da salsa di pomodoro. Soffriggere la cipolla, unire la passata, salare e aggiungere un cucchiaino di zucchero, fare addensare per circa 8/10 minuti e togliere dal fuoco.</p>
<p><em>They must be served with some tomato. Fry the chopped onion, add the tomato sauce, salt 1 teaspoon of sugar and let simmer for 8/10 minutes and set aside.</em></p>
