<p>2 whole pork fillets 350 grams each</p>
<p>2 carrots</p>
<p>1 celery stalk</p>
<p>1 onion</p>
<p>2 garlic cloves</p>
<p>4 tbs olive oil</p>
<p>half glass of white wine</p>
<p>2 tbs flour</p>
<p>salt and pepper</p>
<p>&nbsp;</p>
<p>30 grams of butter</p>
<p>30 grams flour</p>
<p>130 ml milk</p>
<p>&nbsp;</p>
<p>Season the meat with salt and pepper and coat it with the flour.</p>
<p>Heat the 4 tbs of olive oil in a casserole and fry the meat for 8/10 minutes or until crispy and golden. Set aside.</p>

<p>In the same pan fry for 10 minutes the vegetable finely chopped.</p>

<p>When ready add back the meat and let simmer for 5/6 minutes.</p>

<p>Add the wine and let evaporate.</p>

<p>Now add water almost to cover the meat, add a pinch of salt and let cook, half covered, for 40 minutes circa stirring every now and then.</p>

<p>Check doneness with a fork: if water or liquid spills out from the holes let it cook other 10 minutes, otherwise the meati s ready.</p>
<p>Take out the meat and with a blender blend the sauce. Set aside.</p>

<p>In a small saucepan melt down the butter, add the flour and let cook for a couple of miutes stirring continuously.</p>

<p>Add the sauce and the milk.</p>

<p>Bring to boil and let boil for 2/3 minutes (this will cook the flour and thicken the sauce). If necessary add some more milk to reach the desired density.</p>

<p>Tagliare la carne a cubetti regolari. In un recipiente mescolare la salsa di soia con mezzo cucchiaino di amido di maris e unire la carne. Mescolare bene e mettere da parte,</p>

<p>In un recipiente unire le farine per la pastella, l’albume, l’olio e tanta acqua occorre per ottenere un composto denso.</p>

<p>Scaldare l’olio in una padella. Se avete il termometro misurate 190°/200°.  Immergere i cubetti di carne nella pastella e friggere finché non saranno dorati. Sgocciolare su carta assorbente.</p>

<p>In una padella mettere il composto per la salsa e portare a ebollizione.</p>

<p>Aggiungere tutte le verdure tagliate. E cuocere per 7/8 minuti.</p>

<p>Mescolare il cucchiaino di amido di mais con i 3 cucchiai d’acqua e unirlo al composto in ebollizione.</p>

<h2>Pork With Apple Sauce</h2>

<p>1 filetto di maiale (ca. 600 gr) / <em>1 pork fillet (ca. 600 gr)</em></p>
<p>3 mele / <em>3 apples</em></p>
<p>mezza cipolla / <em>half onion</em></p>
<p>Sale e pepe / <em>salt &amp; pepper</em></p>
<p>2 cucchiai di farina / <em>2 tbs all-purpose flour</em></p>
<p>1 bicchiere di vino bianco / <em>1 glass of white wine</em></p>
<p>Olio d’oliva / <em>olive oil</em></p>
<p>30 gr burro / <em>30 gr unsalted butter</em></p>
<p>1 dado / <em>1 stock cube</em></p>

<p>Tritare e soffriggere la cipolla con il burro e un poco di olio.</p>
<p><em>Chop and fry the onion with the butter and 2 tbs of olive oil.</em></p>

<p>Nel frattempo massaggiare la carne con sale e pepe e infarinarla leggermente. Metterla nella casseruola e lasciare dorare for 4 o 5 minuti.</p>

<p>Ora aggiungere 2 bicchieri d’acqua e il dado.</p>

<p>Affettare finemente le mele e unirle alla carne. Coprire e lasciare cuocere per circa 40 minuti.</p>
