<h2>Grandma&#8217;s cake</h2>

<p>Pasta Frolla / <em>Dough</em></p>
<p>500 gr farina / <em>flour</em></p>
<p>250 gr burro / <em>butter</em></p>
<p>250 gr zucchero / <em>sugar</em></p>
<p>3 rossi d’uovo / <em>egg yolks</em></p>
<p>1 uovo intero / <em>egg</em></p>
<p>scorza di mezzo limone grattugiata / <em>grated lemon zest (half lemon)</em></p>
<p>Crema / Cream filling</p>
<p>300 ml di latte + 200 ml panna / <em>300 ml milk + 200 ml cream</em></p>
<p>oppure 500 ml latte / <em>or 500 ml milk only</em></p>
<p>50 gr amido di mais / <em>corn starch</em></p>
<p>150 gr zucchero / <em>sugar</em></p>
<p>6 rossi d’uovo / <em>egg yolks</em></p>
<p>scorza grattugiata di mezzo limone e 1 cucchiaino del succo / <em>grated lemon zest (half lemon) and 1 teaspoon of lemon juice</em></p>
<p>PASTA FROLLA / <em>DOUGH</em></p>
<p>Mettere tutto in un recipiente. Iniziare a impastare con le dita e continuare con la mano. Gradualmente il burro si scalda e la pasta si compatta. Quando è compattata avvolgerla in pellicola e farla riposare un paio d’ore in frigorifero.</p>
<p><em>Put in a container all ingredients for the dough. Start working them with your fingers and then with you hands until it becomes a compact mixtures. Once ready wrap it with film and put it in the fridge for a couple of hours.</em></p>

<p>FARCITURA ALLA CREMA / <em>CREAM FILLING</em></p>
<p>Portare a ebollizione il latte+panna. A parte battere a spuma i rossi con lo zucchero e la scorza di limone unire l’amido di mais setacciandolo. Unire il latte+panna ancora caldi mescolando con la frusta. Unire il succo di limone. Rimettere a fuoco e portare a ebollizione. La crema si addenserà nel momento in cui riprende a bollire, continuare a mescolare (altrimenti attacca) e fare cuocere un paio di minuti. Mettere in un recipiente e coprirla con pellicola (quest’ultima deve aderire bene alla crema per evitare la formazione della cuticula). Far raffreddare.</p>
<p><em>Boil milk+cream. On a side in a container whip the egg yolks with the sugar and the lemon zest, add the corn starch. Now add the milk+cream still hot mixing quickly with the whip. Put everything in a casserole and bring to boil. The cram will get thicker in a few seconds once it will start boiling. Once thicker make boil still for a couple of minutes. Put in a contiainer, cover with film (this is necessary to avoid that the cream gets dry on top) and let cool down.</em></p>

<p>Prendere la pasta e stenderla con il mattarello. Foderare una tortiera con la pasta (25 cm diamtero alta 4 o 5 cm meglio se con la cerniera), farcire con la cream e coprire con un coperchio di pasta. Sigillare i bordi. Incidere dei buchi e spargere di pinoli.</p>
<p><em>Take the dough and roll it out, coat a baking pan with the dough. Fill it with the cream above, and cover with a dough lid. Seal the borders. Make some holes on top and sreapd with some pine kernels.</em></p>

<p>Infornare per 50 min a 170° circa (finché la pasta non diventa dorata).</p>
<p>Spolverare di zucchero a velo prima di servire.</p>

<p><em>Cool down. And spread with icing sugar before serving.</em></p>
