<p>Ispirata dal ristorante Hillstone di New York che la serve con chips di tortilla messicane. Questa versione è forse – perdonerete qui la mia immodestia &#8211; più buona dell’originale. Hehe.</p>
<p>&nbsp;</p>
<p>400 gr spinaci lessati e strizzati</p>
<p>200 gr di carciofi puliti e lessati</p>
<p>1 cipolla</p>
<p>2 spicchi di aglio</p>
<p>200 gr panna acida</p>
<p>1 cucchiaio di farina 00</p>
<p>200 gr di formaggio filante (cheddar, fontina, etc)</p>
<p>100 gr di pecorino grattugiato</p>
<p>50 gr di parmigiano grattugiato</p>
<p>un bicchiere di latte</p>
<p>1 cucchiaino di peperoncino macinato</p>
<p>sale e pepe</p>
<p>Olio EVO</p>
<p>&nbsp;</p>
<p>Tritare grossolanamente i carciofi. Tritare gli spinaci. Affettare finemente la cipolla, tritare l’aglio e soffriggerli con 3 cucchiai di olio EVO finché non la cipolla non sarà traslucida. Unire la farina e incorporare bene.</p>

<p>Quindi unire i carciofi, il peperoncino e gli spinaci e lasciare cuocere per 3 minuti mescolando di continuo. Unire quindi il latte (in caso aggiungerne un pochino), e portare ad ebollizione finchè la consistenza non sarà cremosa.</p>

<p>Unire la panna acida e tutti i formaggi e lasciarli fondere a fuoco dolcissimo. Quando saranno completamente sciolti servire con tortilla chips.</p>

<p>NYC BAGEL</p>
<p>Non mi ero mai cimentato e ho sempre pensato che fosse una cosa noiosa e complessa farle. Ci sono migliaia di ricette e tutte millantano di avere quella originale.</p>
<p>Ma quella originale probabilmente oggi avrebbe un sapore impensabile per i nostri standard. Un pochino come se mangiassimo un formaggio prodotto un secolo fa.</p>
<p>Quindi al diavolo sempre questa cosa dell’essere originali e concentriamoci sul risultato: una bagel soffice ma compatta, buona così ma ancora più buona se tostata.</p>
<p>Il trucco sta tutto nella lievitazione.</p>
<p>La bagel è compatta e non è spugnosissima proprio perché la lievitazione viene interrotta con uno shock temico (che è la bollitura) e finita in forno.</p>
<p>Alcune regole per la buona riuscita:</p>
<p>1) contrariamente al pane, l’impasto deve essere compatto, morbido e umido ma non appiccicoso (non deve attaccarsi alle mani come colla);</p>
<p>2) la prima lievitazione deve arrivare a fare triplicare l’impasto &#8211; l’ideale è lasciarla fuori da mezz’ora a 1 ora e mezza e tenerla in frigorifero un’altra ora prima di lavorarla a bagel. Per un totale di 1H e mezza a 2H e mezza circa (sempre che sia estate o inverno);</p>
<p>3) le bagel sono sempre palline bucate al centro (diffidate chi vi dice di fare il salemetto e chiuderlo ad anello);</p>
<p>4) la seconda lievitazione, quando le bagel sono già in forma, va interrotta dopo un tempo variabile tra i 10 e 30 minuti (se estate o inverno), ossia non appena si è la ripresa della lievitazione – lo capirete perché al tatto le bagel saranno morbide; la bollitura è solo uno shock termico. Si usa acqua salata addizionata di un cucchiaio di bicarbonato (aiuta a renderle più scure). La bagel si cuoce all’inizio con il lato superiore all’ingiù nell’acqua bollente e dopo circa 30 secondi si cuoce dall’altra parte. La bollitura non deve mai superare i 30-40 secondi per lato. Questo permette di avere ancora impasto reattivo all’interno che in forno continuerà a lievitare il tanto che basta a stendere e tendere la crosta esterna rendendola liscia e uniforme.</p>
<p>&nbsp;</p>
<p>500 gr farina ‘0’</p>
<p>250-300 ml di acqua tiepida (q.b.)</p>
<p>un cucchiaino di sale</p>
<p>7 gr di lievito secco</p>
<p>1 cucchiaio di sciroppo di malto (se disponibile)</p>
<p>2 cucchiaini di zucchero</p>
<p>&nbsp;</p>
<p>Per la bollitura:<br />
2 cucchiai di sale grosso</p>
<p>1 cucchiaio di bicarbonato</p>
<p>&nbsp;</p>
<p>In mezzo bicchiere di acqua tiepida, versare il lievito e senza mescolare lasciarlo ravvivare per circa 10 minuti.</p>

<p>In un recipiente versare la farina e gli altri ingredienti secchi, unire il lievito sciolto e aggiungere acqua poco alla volta, iniziando a impastare con una forchetta e poi con le mani fino ad ottenere una palla liscia, morbida e omogenea (o usando la planetaria se la avete). Impastare per una decina di minuti (è fondamentale che la farina si amalgami al meglio).</p>

<p>Lasciare lievitare coperto da pellicola, finché non triplica il volume alternando lievitazione fuori e dentro al frigorifero, secondo la tabella qui sotto:</p>
<p>Estate (ovvero sopra i 25/26°) &gt; 2 ore e 15 (un ora e 15 fuori frigorifero; un’ora in frigorifero)</p>
<p>Inverno (ovvero sotto i 22/23°) &gt; 3 ore, 3 ore e mezza (2 ore, 2 ore e mezzo fuori frigorifero; 1 ora in frigorifero)</p>
<p>Rompere la lievitazione e impastare per un paio di minuti.</p>

<p>Suddividere quindi il composto in circa 12 palline di pari peso (dovrebbero essere da circa 85 gr ciascuna). Ricavare delle palline con la pressione di pollice e indice praticare un foro e allargarlo fino a 3 cm circa.</p>

<p>Posare su una leccarda foderata di carta forno e leggermente unta e lasciare a lievitare finché non inizieranno ad essere visibilmente morbidi o per altri:</p>
<p>Estate &gt; 20/25 minuti</p>
<p>Inverno &gt; 40/45 minuti</p>

<p>Trascorso questo tempo, accendere il forno a 210°C.</p>
<p>Nel frattempo portare a ebollizione abbondante acqua alla quale aggiungere un cucchiaio di bicarbonato e due cucchiai di sale.</p>
<p>Con una paletta, prendere delicatamente ciascuna bagel e immergerla nell’acqua (lato sopra all’ingiù), cuocere per 30-40 secondi, rigirare e cuocere altri 30/40 secondi. Scolare con un cucchiaio forato e porre su un canovaccio per assorbire l’acqua in eccesso.</p>

<p>Riscaldare il forno a 170°.</p>
<p>In un recipiente mescolare lo zucchero e le bucce di limone e d’arancio. Lasciare riposare per 10 minuti. Trascorso il tempo unire la farina e il lievito.</p>

<p>Unire alle farine la pasta di mandorle e il burro morbido.</p>

<p>A parte sbattere le uova e unire gradualmente al composto.</p>

<p>1 cucchiaio e mezzo di lievito</p>
<p>un pizzico di sale</p>
<p>360 ml olio di semi</p>
<p>6 uova</p>
<p>90 ml di succo di un’arancia</p>
<p>1 bustina di vanillina</p>

<p>Sbucciare le mele e tagliarle prima a spicchi e poi a fettine. Metterle in un contenitore e unire la cannella, la buccia d’arancia e lo zucchero. Mescolare bene e mettere da parte.</p>

<p>Accendere il forno a 180°. Imburrare e infarinare uno stampo per ciambella grande.</p>
<p>Mescolare tutti gli ingredienti secchi (farina, zucchero, lievito, sale e vaniglia) in un recipiente.</p>

<p>In una ciotola unire uova, olio e succo d’arancia, sbattere e amalgamare bene.</p>

<p>Versare nella tortiera e informare per 1H e 30 minuti almeno (controllate con uno stuzzicadenti &#8211; uscirà umido sempre per la presenza delle mele ma non ci devono essere creme).</p>

<p>Sbriciolare i biscotti e impastarli con il burro fuso e il cacao. Si otterrà un impasto umido.</p>
<p>Foderare il fondo (imburrato e infarinato) di una tortiera da 23 cm a cerniera con l’impasto. Tenere in frigorifero.</p>

<p>Versare la miscela sopra il fondo di biscotto.</p>

<p>Cuocere in forno per 1h a 170° C. Lasciare raffreddare e porre in frgorifero per 4 ore, meglio se per una notte.</p>
<p>Prepariamo la ganache: Spezzare il cioccolato e metterlo in un recipiente. A parte fare bollire la panna, una volta in ebollizione versarla sul cioccolato e  lasciare per una decina di minuti in infusione. Passato questo tempo con una frusta, mescolare energicamente e amalgamare il tutto.</p>
