<p>4 cucchiai di olio EVO o di semi di arachidi</p>

<p>Ungere i filetti con l’olio e passarli nel ‘Dirt’. Lasciare in marinatura per minimo 15 minuti (meglio se per un paio d’ore o tutta una notte in caso).</p>

<p>Ispirato al mitico Lillie’s Q “Carolina Dirt” (che se non avete mai provato dovete assolutamente acquistare quando andrete negli States), questa polvere è un miracolo per la griglia. Certo il segreto del Carolina Dirt è inespugnabile ma credo di avere trovato un equilibrio che si avvicina parecchio e che forse merita un suo spazio.</p>
<p>Fatene pure un pochino di più che si conserva in barattoli ermetici fino a un anno.</p>

<p>1 cucchiaio di chipotle in polvere*</p>
<p>1 cucchiaino di peperoncino Panco polverizzato*</p>
<p>1 cucchiaio paprika forte</p>
<p>2 cucchiai paprika dolce</p>
<p>1 cucchiaio sale</p>
<p>4 cucchiai zucchero di canna</p>
<p>1/2 cucchiaio cumino</p>
<p>1/2 cucchiaio pepe nero</p>
<p>1 cucchiaio di pepe di Cayenna</p>
<p>1 cucchiaio aglio secco</p>
<p>1 cucchiaio di semi di sedano</p>
<p>2 cucchiai cipolla disidratata</p>
<p>½ cucchiaio origano</p>
<p>1 cucchiaio di semi di senape</p>
<p>½ cucchiaino cannella</p>
<p>1 cucchiaio semi di coriandolo</p>
<p>2 cucchiai di brodo granulare alle verdure</p>
<p>&nbsp;</p>
<p>*il chipotle è un peperoncino affumicato molto diffuso in Messico. Lo trovate nei negozi internazionali ben riforniti. Se lo fate senza non avrete il sapore affumicato ma funziona perfettamente lo stesso.</p>
<p>* il Panco invece è un peperoncino aromatico peruviano molto buono, anche questo lo trovate facilmente in uno store di prodotti internazionali.</p>
<p>Macinare il tutto con un macinacaffè (tutto assieme o separati per poi mescolarli tutti assieme). Non macinate le spezie troppo finemente, macinate a piccoli impulsi per controllare la finezza (non deve essere polvere).</p>
<p>Conservare in barattoli di vetro.</p>
<p>Usare come panatura sulla carne (precedentemente unta con olio EVO).</p>

<p>400 gr carpaccio o straccetti sottili</p>
<p>6 cipollotti</p>
<p>3 spicchi d’aglio</p>
<p>1 cucchiaio di semi di sesamo</p>
<p>1 cucchiaio olio di sesamo</p>
<p>3 cucchiai di salsa di soia</p>
<p>3 cucchiai d’acqua</p>
<p>1 cucchiaio di zucchero di canna</p>
<p>1 cucchiaio di miele</p>
<p>&nbsp;</p>
<p>Per servire</p>
<p>1 lattuga</p>
<p>Gochujang &#8211; salsa di peperoncino coreana</p>
<p>&nbsp;</p>
<p>Tagliare la carne in piccoli straccetti lunghi 7/8 cm e larghi 2/3 cm. Tritare la cipolla e l’aglio.</p>
<p>In un recipiente unire la carne a tutti gli altri ingredienti. Mescolare bene e lasciare macerare in frigorifero per almeno 1 ora.</p>

<p>Cuocere tutto il composto allargandolo sulla griglia rovente o in una padella bassa facendo attenzione che non bruci, deve restare ancora morbida.</p>

<p>Servire il bulgoghi con foglie di lattuga. Fare degli involtini con le foglie di lattuga insaporendo cbn gochujang.</p>
