<p>Il Crescione si usa tanto in Emilia, un pochino meno nel resto d&#8217;Italia ma un ortolano ben rifornito sicuramente lo procura. In caso potete sostituire il crescione con lattuga e un pugno di piselli. Viene buonissima lo stesso.</p>
<p>4 persone</p>
<p>30 minuti</p>
<p>&nbsp;</p>
<p>8 capesante (senza il guscio)</p>
<p>400 gr di crescione (o insalatina novella)</p>
<p>1 scalogno</p>
<p>200 ml di panna liquida</p>
<p>sale e pepe</p>
<p>Olio EVO</p>
<p>&nbsp;</p>
<p>Tritare lo scalogno finemente e soffriggerlo con 2 cucchiai di olio EVO finché non sarà lucido. Unire il crescione, mezzo bicchiere di acqua e lasciare cuocere per una decina di minuti.</p>

<p>Trasferire tutto in un frullatore e frullare il tutto. Rimettere in casseruola, portare ad ebollizione e unire la panna. Riportare il tutto ad ebollizione, lasciare bollire per 2 minuti. Aggiustare di sale e togliere dal fuoco. Tenere da parte.</p>

<p>Scaldare 2 cucchiai di olio EVO in una padella. A parte lavare e asciugare con un canovaccio le capesante. Quando l’olio inizia a fumare unire le capesante (lato superiore rivolto verso il basso) e lasciare friggere (attenzione a fare questa operazione perché l’olio è rovente e la capasanta potrebbe sfrigolare), cuocere 2 minuti poi rigirarla e cuocere altri 4 minuti. Salare e togliere dal fuoco.</p>

<p>In un piatto versare poco meno di un centimetro di salsa di valeriana. Adagiare al centro le capesante, condire con olio d’oliva e pepe e servire.</p>

<p>6 capesante col guscio</p>
<p>170 gr pane grattugiato (meglio se grattato fresco)</p>
<p>70 gr pecorino grattugiato</p>
<p>1/2 bicchiere olio d’oliva</p>
<p>2 cucchiai prezzemolo tritato</p>
<p>succo di mezzo limone</p>
<p>1 spicchio d’aglio tritato finemente</p>
<p>buccia grattugiata di 1 limone</p>
<p>sale e pepe</p>
<p>acqua q.b.</p>
<p>olio extra-vergine q.b.</p>
<p>&nbsp;</p>
<p>Riscaldare il forno a 200°.</p>
<p>Unire tutti gli ingredienti in un recipiente e mescolare.  Aggiungere qualche cucchiaio di acqua per ammorbidire il composto.</p>

<p>Farcire le capesante con il composto. Coprire con un filo di olio e infornare per circa 10 minuti o finché non saranno leggermente tostate. Servire.</p>
