<p>Con questa ricetta si fa un salto nel passato. Parliamo della cucina messicana meno conosciuta e più antica, legata ancora alle tradizioni maya e azteche. I Tamales hanno una storia lunghissima (ci sono tracce del loro consumo già nel 7.000 AC!). La base è la <em>masa</em> un composto con farina di mais bianco che di fatto è la parte che racchiude in sé un cuore saporito. Da sempre si farciscono di qualsiasi cosa: frutta, carne, formaggio, verdura. I Tamales sono cibo portatile che si conserva nella foglia (che, attenzione, non si mangia!), si mangiano in piedi come un panino e sono uno degli esempi di cibo da strada e fast food tra i più antichi del mondo. Questa ricetta è vicinissima all&#8217;originale, ho scartabellato un bel po&#8217; per trovare una ricetta che si discostasse poco, ho cambiato solo l&#8217;impasto della <em>masa</em> che non c&#8217;è traccia storica che dica si impasti con strutto, ma dopo averle provate sia con che senza, ammetto che con lo strutto sono molto, ma molto più buoni. Non sono rapidissimi da fare ma potete farne parecchi tutti in una volta e congelarli per consumarli mano a mano.</p>

<p>2 cucchiai di peperoncino macinato</p>
<p>2 cucchiaini di sale</p>
<p>1 cucchiaio di paprika</p>
<p>1 cucchiaio di aglio in polvere</p>
<p>1 cucchiaio di pepe macinato</p>
<p>1 cucchiaio di semi di cumino macinato</p>
<p>1 cipolla</p>
<p>1 kg di spalla di maiale pulita</p>

<p>mezzo bicchiere di olio di semi</p>
<p>1 grossa cipolla tritata finemente</p>
<p>2 spicchi d’aglio tritati</p>
<p>1 peperoncino jalapeno tritato</p>

<p>1 pacco di foglie di platano da tagliare in fogli da 30&#215;30 cm</p>
<p>&nbsp;</p>
<p>1 kg farina di mais bianco</p>
<p>1 cucchiaio di lievito per torte salate</p>
<p>250 gr di strutto</p>
<p>1 cucchiaino di sale</p>
<p>1 bicchiere di acqua tiepida q.b.</p>

<p>Panna acida per servire</p>
<p>&nbsp;</p>
<p>Mescolare tutte le spezie e trattenerne un cucchiaino. In una padella abbastanza capiente, mettere la carne già pulita con la cipolla a tocchetti. Spolverare con le spezie e coprire la carne con acqua per almeno 2 o 3 cm. Portare ad ebollizione, abbassare la fiamma e lasciare sobbollire per circa 3 ore, aggiungendo mano a mano acqua se necessario al fine di mantere il livello dei liquidi costanti.</p>

<p>Lasciare raffreddare, estrarre la carne e trattenere il liquido. Togliere dalla carne il grasso in eccesso e sbriciolarla grossolanamente. Tenere da parte.</p>

<p>In un recipiente unire farina di mais, lievito, sale, l’acqua e lo strutto a temperatura ambiente. Iniziare a impastare e unire eventuale liquido di cottura della carne se necessario, fino ad ottenere un composto compatto ma umido. Mettere da parte.</p>

<p>In una padella soffriggere la cipolla, l’aglio e il peperoncino, il cucchiaino di psezie trattenuto e unire la carne sbriciolata. Saltarla per 5 o 6 minuti.</p>

<p>Su un ripiano mettere una porzione tagliata di foglia di platano, spalmare 3 cucchiai di composto di mais in una linea da circa 7&#215;15 cm, adagiare al centro del composto di mais 1 cucchiaio e mezzo di composto di carne (creando una linea da 3 x 8 cm) e chiudere affinché l’impasto di mais racchiuda la carne al suo interno, avvoglere il tutto nella foglia e legare con dello spago.</p>

<p>Mettere tutti gli involtini così preparati, in posizione verticale, in una vaporiera e cuocere a vapore per circa 1 ora e 15 minuti &#8211; alternativamente, possono essere posizionati sempre in posizione verticale in una pentola abbastanza capiente e cotti, semi coperti, in circa 4 cm di acqua e brodo di cottura qualora fosse avanzato per lo stesso tempo (metà dell’involtino sarà quindi immerso nell’acqua). Servire caldissimi con panna acida (avvisate i vostri ospiti che vanno spacchettati per essere consumati – la foglia non è commestibile).</p>

<p>A questo punto lo potete grigliare (che è la giusta conclusione), o in assenza di una griglia, scaldate 2 cucchiai d’olio in una padella e versarvi il pollo marinato saltandolo a fuoco alto finché non inizia ad abbrustolire.</p>

<p>Unire 250 ml d’acqua, 1 cucchiaino di zucchero, 1 cucchiaino di sale, origano e il mezzo lime spremuto.</p>

<p>Unire i pomodori. E lasciare sobbollire a fuoco medio per circa 30 minuti, mescolando di tanto in tanto. Se si asciuga troppo aggiungere acqua.</p>

<p>Tritare grossolanamente tutti gli ingredienti: la cipolla, il peperone, il peperoncino, i pomodori (sgocciolare i pomodori e togliere l’acqua in eccesso).</p>

<p>60 gr olio di semi</p>
<p>1 cucchiaino colmo lievito per torte salate</p>
<p>200 gr circa acqua tiepida</p>
<p>1/2 cucchiaio di sale</p>

<p>Versare in un contenitore la farina, l’olio, il sale e il lievito. Iniziare ad amalgamare con le dita, aggiungere l’acqua poco alla volta (la quantità necessaria dipenderà dal grado di umidità della farina), aggiungetene poco alla volta fino a che il composto sarà morbido ed elastico e non si attaccherà alle dita. Se avete esagerato con l’acqua, compensate con un po’ di farina (e viceversa).</p>

<p>Cuocerle su una piastra o una padella antiaderente. Cuocere per 40 secondi per parte. Attenzione a non cuocerle troppo altrimenti si seccano e diventano croccanti. Impilarle in un piatto e mantenerle sempre coperte con un coperchio (l’umidità le mantiene morbide e arrotolabili).</p>
