<p>1 kg spalla di maiale</p>
<p>3 cucchiai di BBQ dirt (<a href="http://eatwithmarco.com/it/il-carolina-dirt/">BBQ dirt ricetta</a>)</p>
<p>1 cucchiaio di zucchero</p>
<p>1 cucchiaio di pepe nero macinato</p>
<p>1 cucchiaino di sale</p>
<p>1 cipolla in quarti o 4 cipollotti interi</p>
<p>3 spicchi d’aglio tritati finemente</p>
<p>mezzo bicchiere di acqua</p>
<p>mezzo bicchiere di aceto bianco (vino o riso o mele a piacere)</p>
<p>6 panini da hamburger (o tortillas)</p>

<p>Togliere la cotenna dalla carne ma lasciare il grasso.</p>
<p>In un piccolo recipiente mescolare il dirt, lo zucchero, il pepe e l’aglio tritato.</p>

<p>Ricoprire la carne con questo composto, porre in una casseruola e unire tutti gli altri ingredienti (escluso il pane ovviamente).</p>

<p>Portare ad ebollizione a fuoco alto, quando bolle, ridurre il fuoco al minimo e coprire. Lasciare sobbollire rigirando di tanto in tanto per 3 ore circa o finché la carne non sarò tenera e friabile.</p>

<p>Togliere dal fuoco, lasciare intiepidire. Estrarre la carne (trattenere la salsa di cottura) e sbriciolarla grossolanamente con una forchetta. Unire la salsa di cottura e lasciare intiepidire.</p>

<p>Tostare il pane o scaldare la tortilla e farcire con la carne sbriciolata. Condire con salsa BBQ o con  formaggio o altri ingredienti a piacere (insalata, pomodoro, etc).</p>
