<p>5 uova (a temperatura ambiente)</p>
<p>180 gr zucchero</p>
<p>170 gr farina &#8216;0&#8217;</p>
<p>60 grammi di miele</p>
<p>25 grammi di  acqua</p>
<p>1 cucchiaio di polvere di te verde (matcha)</p>
<p>&nbsp;</p>
<p>*Mescolare e tenere da parte (servirà a cottura ultimata):</p>
<p>1 cucchiaio di miele</p>
<p>½ cucchiaio di acqua</p>
<p>&nbsp;</p>
<p>Foderare uno stampo (quadrato da 21&#215;21 o tondo da 21 cm di diametro o da plumcake 25&#215;15) con carta forno. Setacciare la farina per due volte. Amlgamare il miele con l’acqua.</p>
<p>Pre riscaldare il forno a 160° C.</p>
<p>Sbattere le uova da sole per un paio di minuti. Unire lo zucchero e continuare a sbattere finché non avranno quadruplicato il loro volume (meglio usare una planetaria o un frullatore elettrico).</p>

<p>Unire il composto di miele. Unire lentamente la farina (in tre o quattro volte) e finire con la polvere di tè verde.</p>

<p>Riempire fino a tre quarti dello stampo non oltre. Mescolare con uno stecchino per togliere le bolle in eccesso e informare per 35 minuti.</p>

<p>Ancora calda, spennellare con il composto di miele e acqua* la superficie e impacchettare bene con pellicola trasparente. Lasciare raffreddare prima di tagliare. E&#8217; ottima se spacchettata e servita il giorno dopo.</p>

<p>60 ml succo limone</p>
<p>60 ml succo arancia</p>
<p>225 gr zucchero</p>

<p>Riscaldare il forno a 170°.</p>
<p>In un recipiente mescolare lo zucchero e le bucce di limone e d’arancio. Lasciare riposare per 10 minuti. Trascorso il tempo unire la farina e il lievito.</p>

<p>Foderare uno stampo da plum-cake con carta forno e versarvi il composto.</p>

<p>Infornare per circa 60 minuti a 170° (controllate la cottura con uno stuzzicadenti).</p>

<p>Una volta tolta dal forno la torta preparate lo sciroppo unendo lo zucchero ai succhi. Non preparate il succo prima.</p>

<p>Farcitura:</p>
<p>1 cucchiaio di cannella macinata</p>
<p>succo di mezzo limone</p>
<p>100 gr di zucchero</p>
<p>1 pizzico di sale</p>
<p>60 gr di burro</p>
<p>30 gr maizena</p>
<p>facoltativo: mezzo cucchiaino di noce moscata</p>

<p>Sbucciare le mele e tagliare in 10/12 spicchi uguali. Mettere le mele in un recipiente, unire lo zucchero, il sale, la cannella (e la noce moscata). Lasciare riposare a temperatura ambiente per almeno 30-40 minuti.</p>

<p>In un recipiente mettere la farina, il sale e lo zucchero. Unire il burro ancora freddo.</p>

<p>Iniziare a lavorare il tutto con le mani rompendo il burro con forza. Dopo qualche minuto l’impasto inizierà a fare grossi grumi. Unire ora, poco alla volta e sempre impastando l’acqua fredda finché non si formerà una palla abbstanza soda.</p>

<p>Prenderne 3/5 dell’impasto (mettere in frigorifero il resto), e stenderla tra 2 fogli di pellicola trasparente (questo vi eviterà di romperla quando la trasferite nella tortiera).</p>

<p>Togliere la pellicola sopra e rovesciare l’impasto steso nella tortiera e foderarla.Togliere a questo punto anche l’altro foglio di pellicola. Mettere in frigorifero per mezz’ora.</p>

<p>Accendere il forno a 200°.</p>
<p>Unire il burro e farlo sciogliere. Ora, le mele avranno rilasciato parecchio liquido, filtrarlo e metterlo in una piccola casseruola. Farlo bollire finché non si addenserà parecchio (quasi caramellizzato).</p>

<p>Unire la maizena alle mele e mescolare bene. Ora versare lo sciroppo.</p>

<p>Versare le mele ora nella tortiera foderata. Stendere la pasta rimanente e coprire le mele.</p>

<p>Unire le uova, il burro e l’acqua alla miscela di farine. Mescolare bene.</p>

<p>Versare in una tortiera da 20 cm di diametro. Cuocere la torta di mandorle in forno per circa 35 minuti (fare la prova dello stuzzicadenti). Servire tiepida spolverata di zucchero a velo. La torta alle mandorle è ottima se servita con cioccolato fondente sciolto.</p>

<p>2 cucchiaini di lievito</p>
<p>1 cucchiaino di vanillina</p>
<p>300 gr zucchero</p>
<p>150 gr di uvetta</p>
<p>latte q.b.</p>

<p>Mettere l’uvetta a bagno in acqua tiepida.</p>
<p>Sbattere bene il burro con lo zucchero.</p>

<p>Unire le uova uno alla volta.</p>

<p>Aggiungere qualche cucchiaio di latte qualora il composto fosse troppo duro.</p>

<p>Unire ora l’uvetta strizzata e infarinata rapidamente.</p>

<p>250 gr riso glutinoso</p>
<p>400 ml circa di latte di cocco</p>
<p>acqua q.b.</p>
<p>50 gr zucchero</p>
<p>2 mango</p>

<p>Mettere il riso in un contenitore e coprirlo d’acqua. Lasciarlo in ammollo per almeno 4 ore, meglio se per una notte intera.</p>

<p>Ora mettere il riso in una casseruola con la medesima acqua. Aggungere tanto latte di cocco quanto ne sevre per coprire il riso di circa 1 cm.</p>

<p>Portare ad ebollizione a fiuoco medio. Preso il bollore abbassare al minimo e lasciare cuocere per 8-10 minuti semi-coperto. Verificare la cottura e togliere dal fuoco.</p>

<p>Nel frattempo tagliare il mango a julienne o a cubetti a piacere. Conservare il frigorifero.</p>

<p>Ora, in una casseruola mettere il restante latte di cocco con lo zucchero scaldarlo finché lo zucchero non sarà completamente sciolto.</p>

<p>Versare questo composto ancora caldo, sul riso  e mescolare bene fino a completo assorbimento.</p>
