<p>Ancora Sicilia. Sulle ricette di verdure non ha rivali. Questa ricetta è rapidissima ed è la soluzione ottimale come contorno ma soprattutto come finger food per un aperitivo a base di Inzolia o magari di un Vermentino Sardo.</p>

<p>3 melanzane lunghe di media grandezza</p>
<p>200 gr di pan grattato</p>
<p>80 gr di pecorino grattugiato</p>
<p>1 cucchiaio di prezzemolo tritato</p>
<p>mezzo spicchio d’aglio tritato</p>
<p>sale e pepe</p>
<p>Olio EVO q.b.</p>
<p>Aceto bianco q.b.</p>
<p>&nbsp;</p>
<p>&nbsp;</p>
<p>Tagliare le melanzane verticalmente in fette dallo spessore di circa 2 o 3 mm.</p>
<p>Scaldare una piastra e grigliarle da entrambi i lati per circa 4 minuti (avendo cura di salare la piastra di tanto in tanto).</p>

<p>Nel frattempo in un recipiente, mescolare tutti gli ingredienti, aggiungere acqua e 5 cucchiai di olio EVO fino ad ottenere un composto compatto ma friabile.</p>

<p>In un piccolo contenitore versare 5 cucchiai di olio EVO e 2 cucchiai di aceto bianco.</p>
<p>Passare rapidamente le fette grigliate in questo composto adagiarle su un ripiano. Fare delle piccole polpette con il composto di pane e arrotolarlo con le fette di melanzana.</p>
<p>Disporre gli involtini in una teglia da forno.</p>

<p>facoltativo: olive kalamata snocciolate</p>

<p>Protare acqua ad ebollizione e salare. Nel frattempo, sbucciare e tagliare a cubetti da 3 cm di lato circa le melanzane. Bollirle per 8/9 minuti o finché non saranno leggermente morbide (attenzione a non cuocere troppo o diventeranno troppo molli).</p>

<p>Scolarle in un colapasta e, ancora calde, bagnarle dentro lo scolapasta con l’aceto (a me piacciono aspre, se preferite un sapore più delicato usate metà dell’aceto). Lasciare intiepidire.</p>

<p>Pulire e tagliare a pezzi da 1 cm circa il sedano (usare anche le foglie). Tritare lo spicchio d’aglio. In un recipiente unire le melanzane, il sedano fresco, l’aglio, l’olio d’oliva e se desiderate le olive. Mescolare bene, aggiustare di sale e pepe e servire.</p>

<p class="p2"><span class="s1">500 ml olio di semi d’arachidi</span></p>
<p class="p2"><span class="s1">2 spicchi d’aglio</span></p>
<p class="p2"><span class="s1">sale e pepe</span></p>
<p class="p2"><span class="s1">olio d’oliva</span></p>
<p class="p1">Pulire e tagliare a fette le melanzane. Metterle a strati salando ogni strato. Porre un peso sopra e farle sgocciolare per almeno 5/6 ore.</p>

<p class="p2"><span class="s1">Nel frattempo soffriggere l’aglio con 5/6 cucchiai d’olio d’oliva. Unire la salsa di pomodoro, 1 cucchiaino di zucchero e aggiustare di sale e pepe. Cuocere per 15 minuti. Aggiustare di sapore ancora se necessario e aggiungere il basilico. Togliere dal fuoco.</span></p>

<p class="p2"><span class="s1">Ora mettere le melanzane a strati nella teglia, e ad ogni strato aggiungere la salsa di pomodoro, dadini di mozzarella, abbondante parmigiano e qualche foglia di basilico. Continuare finché non finiranno le melanzane. </span></p>

<p>800 gr melanzane a cubetti</p>
<p>300 gr sedano a tocchetti da 1 cm ca.</p>
<p>30 gr capperi</p>
<p>1 cipolla media</p>
<p>100 gr pomodorini</p>
<p>100 gr passata di pomodoro</p>
<p>100 gr olive a fette</p>
<p>3 cucchiai d&#8217;aceto bianco</p>
<p>1 cucchiaio di zucchero</p>
<p>olio d’oliva</p>
<p>sale e pepe</p>

<p>Mettere le melanzane a cubetti in uno scolapasta, salarle e mettervi sopra un peso (con il peso il processo di gocciolatura è più rapido), lasciare sgocciolare per 1 ora circa.</p>

<p>Bollire per 7/8 minuti il sedano in acqua salata.</p>

<p>Soffriggere la cipolla affettata finemente con olio d’oliva. Aggiungere olive e capperi.</p>

<p>Ora aggiungere il sedano.</p>

<p>Ora aggiungere lo zucchero e l’aceto e fare evaporare bene. Poi salare e pepare.</p>

<p>Unire i pomodori e dopo 5 minuti unire la salsa. Fare evaporare l’acuqa in eccesso. Mettere da parte.</p>

<p>Ora, soffriggere le melanzane in abbondante olio. Una volta morbide e dorate, unire il composto preparato in precedenza. Lasciare insaporire per 5 minuti (aggiustare di sale se necessario). Pronta.</p>

<p>500 gr maccheroni</p>
<p>3 melanzane</p>
<p>1 spicchio d’aglio</p>
<p>basilico</p>
<p>500 gr pelati</p>
<p>olio d’arachidi per friggere</p>
<p>sale e pepe</p>
<p>olio d’oliva</p>
<p>150 gr ricotta salata grattugiata</p>

<p>Pelare le melanzane a strisce alternate. Tagliarle a fette di ca. 1 cm. disporle in un colapasta salare il primo strato e continuare con un altro strato di melanzane, salare, e così via. Mettere sopra un peso e lasciare scolare per un paio d’ore.</p>

<p>Nel frattempo soffriggere l’aglio con un pochino d’olio. Unire i pelati schiacciati. Aggiustare di sale e pepe, aggiungere un cucchiaino di zucchero e fare sobbollire per una ventina di minuti. Mettere da parte.</p>

<p>Prendere le melanzane, strizzarle con le mani e friggerle in olio bollente finché non saranno dorate girandole di tanto in tanto. Tagliarle a listarelle e aggiungerle alla salsa. Riscaldare il tutto e fare sobbollire per 10 minuti. Alla fine aggiungere il basilico fresco.</p>

<p>Cuocere la pasta e versarla nella salsa, saltarla rapidamente su fiamma viva e servire. Spolverare con ricotta salata grattugiata e servire.</p>
