<p>500 gr di pollo o tacchino macinato</p>
<p>1 spicchio d’aglio</p>
<p>2 cm zenzero fresco</p>
<p>3 cucchiai di coriandolo fresco tritato</p>
<p>1 cucchiaio di amido di mais</p>
<p>3 cucchiai di olio d’arachidi</p>
<p>3 cucchiai di pasta di curry verde*</p>
<p>1 o 2 cucchiai di salsa di pesce</p>
<p>4 o 5 melanzane thai (o 1 melanzana normale)</p>
<p>100 gr fagiolini</p>
<p>3 cipollotti</p>
<p>50 gr di anacardi</p>
<p>400 gr di latte di cocco</p>
<p>succo di 1 lime</p>
<p>20 foglie di basilico fresche</p>
<p>sale</p>
<p>se disponibili: 3 foglie di kaffir</p>
<p>* la trovate pronta nei supermercati internazionali o potete farla in casa seguendo questa ricetta: <a href="http://eatwithmarco.com/it/curry-verde-tailandese-pasta/">Curry Verde Tahilandese (pasta)</a></p>
<p>In un recipiente mescolare il pollo con 1 cucchiaio di coriandolo fresco, lo zenzero tritato, lo spicchio d’aglio e sale. Impastare con le mani e formare piccole polpette del diametro di 2-3 cm circa.</p>

<p>Scaldare l’olio di arachidi e saltare le polpette nell’olio caldo per 8/9 minuti. Tenere da parte.</p>

<p>In una casseruola scaldare 2 cucchiai di olio di arachidi e aggiungere la pasta di curry verde, lasciare soffriggere per 4 minuti, unire il latte di cocco portare ad ebollizione.</p>

<p>Unire quindi i cipollotti a grandi pezzi e i fagiolini tagliati a metà e lasciare sobbollire per 6/7 minuti, unire le melanzane a cubetti e, dopo 4 minuti, insaporire con la salsa di pesce (o il sale) e il succo di lime.</p>

<p>Unire infine le polpette, gli anacardi e il basilico, lasciare sobbollire e insaporire per 5 minuti.</p>
