<p>2 cucchiai d’aceto</p>
<p>2 cucchiai d’acqua</p>
<p>un pizzico di sale</p>
<p>3 rossi d’uovo</p>
<p>250 gr burro</p>
<p>2 gocce di succo di limone</p>
<p>&nbsp;</p>
<p>Bollire in un pentolino l’acuqa con l’aceto e ridurre di 2/3.</p>

<p>Togliere dal fuoco e lasciare intiepidire.</p>
<p>Nel frattempo fare fondere a bagno maria il burro.</p>
<p>Unire i rossi leggermente sbattuti a parte al composto di acqua e aceto. Amalgamare bene.</p>

<p>Rimettere sul fuoco medio-basso e unire lentamente il burro sbattendo costantemente con una frusta, finché la salsa non sarà fluida ma sostenuta.</p>

<p>Non fare bollire, l’uovo cuocendo addenserà la salsa ma se bolle rischia di separarsi. In questo caso con qualche goccia d’acqua dovrebbe ricompattarsi</p>
