<p>400 gr di salsa al pomodoro*</p>
<p>5 uova</p>
<p>80 gr di parmigiano grattugiato</p>
<p>4 fette di pan carré tostato</p>
<p>&nbsp;</p>
<p>* Salsa di pomodoro: soffriggere per un paio di minuti mezzo spicchio di aglio con 3 cucchiai di olio EVO. Estrarre l’aglio e unire la passata di pomodoro. Condire con 1 cucchiaino di zucchero e un pizzico di sale. Lasciare sobbollire per 7/8 minuti, il tempo che evapori l’acqua in eccesso. Unire 5 o 6 foglie di basilico fresco e continuare con la ricetta.</p>
<p>Scaldare la salsa al pomodoro.</p>

<p>A parte sbattere le uova con il parmigiano e unirle alla salsa di pomodoro calda.</p>

<p>A fuoco dolce, lasciare rapprendere le uova delicatamente e quando il tutto avrà raggiunto una consistenza cremosa, servire subito con il pane tostato. Spolverare di parmigiano grattugiato.</p>

<p>E’ una versione facile e garantita per fare le uova in camicia. Sovrapporre due fogli di pellicola trasparente. Con un pennello oliare bene il centro. Mettere i due fogli in una ciotola, rompervi l’uovo dentro e chiudere i lembi della pellicola per formare un sacchetto (fare fuoriuscire l’aria). Legarlo con lo spago.</p>
<p>Immergere i sacchettini in acqua in ebollizione per lasciarli per 4 (massimo 5) minuti. Tagliare i sacchetti e estrarre le uova: Il tuorlo sarà ancora cremoso e il bianco rappreso. Il risultato è formidabile.</p>

<p>Battere leggermente con una forchetta due uova per persona con un pizzico di sale e pepe.</p>
<p>Scaldare sul fuoco 1 cucchiaio di olio in una teglia da forno per pizza, versare le uova e farle scorrere su tutta la superficie (si creerà un foglio sottilissimo).</p>
<p>Lasciare rapprendere a fuoco lento, con una spatola staccare i bordi e rovesciare su un tagliere: arrotolare subito. Servire o utilizzare secondo necessità.</p>

<p>Ottime per le zuppe asiatiche o per arricchire un minestra ancora bollente.</p>
<p>Versare le uova in un conenitore alto, versarvi acqua bollente a coprire (250 ml per uovo). Lasciare a riposo per 8 minuti. Scolare e versare in acqua fredda per 1 minuto. Rompere (sempre dal basso) e versare l’uovo cremoso nella zuppa già impiattata.</p>

<p>In una pentola antiaderente scaldare un cucchiaio di olio d’oliva. Rompere l’uovo gentilmente (evitando così che il bianco si allarghi troppo) nel coppapasta.</p>
<p>Cuocere a fuoco medio-basso per evitare che l’olio schizzi.</p>
<p>Quando il bianco è sodo e trattiene bene il rosso (che sarà ancora lucido), tagliare i bordi e  togliere il coppapasta. Togliere l’uovo dal fuoco e appoggiarlo su un canovaccio o un tovagliolo di carta per togliere l’olio in eccesso e servire.</p>

<p>La regina delle uova. Sbattere leggermente due uova per persona con un pizzico di sale. Preparare l’ingrediente per farcire.</p>
<p>Sciogliere una noce di burro in una padella. Aggiungere le uova battute e roteare la padella affinché tutto il liquido inizi a rapprendersi, con una spatola tenere i bordi staccati dalla padella. Quando inizia a solidificarsi, ma in superficie ancora lìuovo non è completamente rappreso, farcire con l’ingrediente a piacere.</p>
<p>Mettere la padella in posizione obliqua e fare scivolare l’omelette sul bordo affinché una parte non sbordi. Prendere la parte sbordata e con un colpo di spatola rovesciare la metà che sborda sull’altra parte ancora in padella, chiuderla con l’altro lembo, girarla per qualche secondo e servire.</p>

<p>Saltare la pancetta in una padella per 3/4 minuti. Mettere da parte.</p>

<p>Mettere le fette di pane nella padella. Versare lentamente un uovo intero nel buco, cuocere da entrambi i lati finché non sarà abbastanza rappreso. Impiattare con la pancetta e servire.</p>
