<p>2 eggplants</p>
<p>4 celery stalks</p>
<p>1 garlic clove</p>
<p>half glass of white vinegar</p>

<p>Bring water to a boil and add a generous pinch of salt. Meanwhile peel and dice the eggplants to 3 cm pieces. Boil the aubergines for 8/9 minutes (until they get softer – careful not to overcook them).</p>

<p>Drain all water, and still hot into the colander, sprinkle them with the vinegar (I like them sour, if you prefer a milder taste use half vinegar). Cool down.</p>

<p>Clean and dice the celery (including the leaves) to pieces 1 cm long. Chope finely the garlic clove. In a bowl, put the eggplants, the diced celery, the garlic, the olive oil, and if you like the pitted olives. Mix well. Season with salt and pepper to taste and serve.</p>

<p>3 anchovies or 2 cm anchovies paste</p>

<p>ground dried chilli peppers</p>
<p>500 ml frying oil</p>

<p>Heat the frying oil. Dice che aubergines into small pieces  max 2 cm long.</p>

<p>Fry the aubergines in the hot frying oil until golden brown. Set aside.</p>

<p>Bring enough water to boil. Meanwhile stir fry the garlic (minced or full cloves at your choice) along with the anchovies (or anchovie paste), and add the aubergines, mix well. Set aside.</p>

<p>Cook the pasta as per directions. Once ready add the cooked pasta and stir it on high heat for a couple of minutes. Serve and sprinkle with grated pecorino cheese.</p>

<p>200 gr pomodorini / <i>200 gr cherry tomatoes</i></p>
<p>3 filetti d’acciuga / <i>3 anchovy fillets</i></p>
<p>20 capperi / <i>20 capers</i></p>
<p>3 cucchiai di pane grattugiato / <i>3 tbs breadcrumbs</i></p>
<p>2 cucchiai di parmigiano grattugiato / <i>2 tbs shaved parmesan</i></p>
<p>3 cucchiai olio d’oliva / <i>3 tbs olive oil</i></p>

<p>Pulire le zucchine e scavare la polpa.</p>

<p>Scaldare l’olio in una pentola e unire le acciughe.</p>

<p>Quando sono sciolte, unire la polpa delle zucchine e i capperi. Cuocere per 7/8 minuti a fuoco vivace.</p>

<p>Nel frattempo cuocere le zucchine svuotate a secco in forno  caldo (200°) per 15 minuti. O alternativamente n abbondante acqua salata per 10 minuti.</p>

<p>Farcire con questo composto le zucchine e cuocere in forno per 30 minuti a 190°-200° finché non saranno ben gratinati. Servire.</p>

<p class="p2"><span class="s1">4 mozzarelle / <em>4 mozzarellas</em></span></p>
<p class="p2"><span class="s1">200 gr parmigiano / <em>200 gr grated parmesan cheese</em></span></p>
<p class="p2"><span class="s1">500 ml olio di semi d’arachidi / <em>500 ml frying oil</em></span></p>
<p class="p2"><span class="s1">2 spicchi d’aglio / <em>2 garlic cloves</em></span></p>
<p class="p2"><span class="s1">sale e pepe / <em>salt and pepper</em></span></p>

<p class="p1">Pulire e tagliare a fette le melanzane. Metterle a strati salando ogni strato. Porre un peso sopra e farle sgocciolare per almeno 5/6 ore.</p>
<p class="p2"><span class="s1"><em>Clean and slice the aubegrines into half cm thick slices. Put them in a colander and spread salt on every layer. Put something heavy in top and let loose the water for 5/6 hours.</em></span></p>

<p class="p2"><span class="s1">Nel frattempo soffriggere l’aglio con 5/6 cucchiai d’olio d’oliva. Unire la salsa di pomodoro, 1 cucchiaino di zucchero e aggiustare di sale e pepe. <p>1 cipolla media / <em>1 medium size onion</em></p>
<p>100 gr pomodorini / <em>100 gr cherry tomatoes</em></p>
<p>100 gr passata di pomodoro / <em>100 gr tomato sauce</em></p>
<p>100 gr olive a fette / <em>100 gr olives sliced</em></p>
<p>3 cucchiai d‘aceto bianco / <em>3 tbs white wine vinegar</em></p>
<p>1 cucchiaio di zucchero / <em>1 tbs white sugar</em></p>

<p>Mettere le melanzane a cubetti in uno scolapasta, salarle e mettervi sopra un peso (con il peso il processo di gocciolatura è più rapido), lasciare sgocciolare per 1 ora circa.</p>
<p><em>Put the diced eggplants in a drainer, add salt, and cover them with a board and put a casserole filled with water on top (this will help increase the weight on the eggplants and make them drip the water quicker).</em></p>

<p>Bollire per 7/8 minuti il sedano in acqua salata.</p>

<p>Soffriggere la cipolla affettata finemente con olio d’oliva. Aggiungere olive e capperi.</p>

<p>Unire i pomodori e dopo 5 minuti unire la salsa. Fare evaporare l’acuqa in eccesso. Mettere da parte.</p>

<p>Ora, soffriggere le melanzane in abbondante olio. Una volta morbide e dorate, unire il composto preparato in precedenza. Lasciare insaporire per 5 minuti (aggiustare di sale se necessario). Pronta.</p>
<p><em>Now fry the eggplants in abundant olive oil. Once soft and golden, add the mixtures above. Simmer for 5 minutes (adjust in salt if necessary). Ready.</em></p>

<p>500 gr maccheroni / maccheroni</p>
<p>3 melanzane / <em>3 eggplants</em></p>
<p>1 spicchio d’aglio / <em>1 garlic clove</em></p>
<p>Basilico / <em>basil</em></p>
<p>500 gr pelati / <em>tinned tomatoes</em></p>
<p>Olio d’arachidi per friggere / <em>peanut oil for frying</em></p>
<p>Sale e pepe / <em>salt and pepper</em></p>
<p>Olio d’oliva / <em>Olive oil</em></p>
<p>150 gr ricotta salata grattugiata / <em>greated matured ricotta cheese</em></p>

<p>Pelare le melanzane a strisce alternate. Tagliarle a fette di ca. 1 cm. disporle in un colapasta salare il primo strato e continuare con un altro strato di melanzane, salare, e così via. Mettere sopra un peso e lasciare scolare per un paio d’ore.</p>
<p><em>Peel the eggplants in stripes (see pic). Cut them in 1 cm. slices and put them in a drainer, put some salt and continue with other layers of sliced eggplants, adding salt in between until you finish them. Put a weight on top and let drain for a couple of hours.</em></p>

<p>Nel frattempo soffriggere l’aglio con un pochino d’olio. Unire i pelati schiacciati. Aggiustare di sale e pepe, aggiungere un cucchiaino di zucchero e fare sobbollire per una ventina di minuti. Mettere da parte.</p>
<p><em>Meanwhile peel the garlic and fry it in a pan with some olive oil. Add the tomatoes (chopped). Salt, pepper and 1 teaspoon of sugar. Let simmer for 20 minutes, taste it if it is too acid add sugar, if salt is missing, add salt. Set aside.</em></p>

<p>Prendere le melanzane, strizzarle con le mani e friggerle in olio bollente finché non saranno dorate girandole di tanto in tanto. Tagliarle a listarelle e aggiungerle alla salsa. Riscaldare il tutto e fare sobbollire per 10 minuti. Alla fine aggiungere il basilico fresco.</p>
<p><em>Take the eggplants. squeeze them with your hands. Take the oil to high temperature and fry the eggplants turning them once or twice until golden. Cut them in slices and add them to the sauce. Warm up and simmer for 10 minutes. Add the basil.</em></p>

<p>Cuocere la pasta e versarla nella salsa, saltarla rapidamente su fiamma viva e servire. Spolverare con ricotta salata grattugiata e servire.</p>
<p><em>Cook the pasta al dente pour it in the pan with the sauce and mix it on high flame for a couple of minutes. Spread with matured ricotta cheese.</em></p>
