<p>500 gr baccalà</p>
<p>1 cipolla</p>
<p>400 gr patate</p>
<p>80 gr burro</p>
<p>1 uovo</p>
<p>pane grattugiato q.b.</p>

<p>Lasciare il baccalà in ammollo in acqua fredda (tenerlo in frigorifero) per 24-48 ore cambiando l’acqua ogni 8 ore circa.</p>

<p>Mettere il baccalà in una casseruola e coprire con acqua fredda. Portare il tutto ad ebollizione. Non appena comincia a bollire togliere dal fuoco e scolare. Lasciare raffreddare.</p>

<p>Nel frattempo cuocere le patate. Sbucciarle e tagliarle a cubetti. Tenere da parte.</p>

<p>Taglare le cipolle a fettine sottili e farle appassire in una noce di burro finché non saranno traslucenti.</p>

<p>Una volta freddo, pulire la pelle e togliere le spine dal baccalà e sbriciolarlo in un recipiente.</p>

<p>Unire le patate. Unire le cipolle e il pepe.</p>

<p>Unire l’uovo.</p>

<p>Aiutandosi con un coppapasta (o a mano libera), formare delle mini crocchette (alte circa 1 cm e ½, e 8 cm di diametro) e passarle nel pane grattugiato.</p>

<p>In una padella fare sciogliere il burro, e cuocervi le crocchette per circa 6 minuti per parte.</p>
