Gamberi In Saor
800 gr shrimps
4 big onions
20 gr pine nuts
30 gr sultanas
half glass olive oil
4 tbs white vinegar
2 tbs water
½ tsp sugar
100 gr all-purpose flour
frying oil
salt
To prepare the gamberi in saor, clean and wash the shrimps. Coat the with the flour.
Deep-fry them in frying oil for 4/5 minutes. Drip them and set aside.
Meanwhile slice finely the onions and let them cook slowly – low heat – with the olive oil for 20-25 minutes.
Add the vinegar, the salt and the sugar. Stir and let vinegar evaporate. Cook for other 7/8 minutes and retain from fire. Add the sultanas (drenched in water) and the pine nuts.
Arrange the deep-fried shrimps on a plate and cover them with the stew onions still hot (including the juices). Set aside, cool down and store for 4/5 hours before serving.
