Pan Meino
300 gr fine corn flour
150 gr all-purpose flour
150 gr unsalted butter
grated lemon zest (1 lemon)
3 eggs
2 tsp baking powder
140 gr granulated sugar
70 gr icing sugar
To serve: fresh cream
Pre-heat oven to 160° C.
In a container add the flours, the baking powder and mix.
Add to the dry ingredients the butter (melted down).
Add the eggs lightly beaten with the sugar and the lemon zest.
Mix first with a fork and then with your hands. Roll everything in cling film and refrigerate for 30 mins.
Roll the dough into balls of 12-14 cm diameter , put them on a dripping pan (coated with baking paper) and flat them a little.
Sprinkle with icing sugar and bake them for 20-25 minutes (when they are getting golden on the sides they are ready).
Serve warm with fresh cream.
