Creole style rice

350 grams rice

200 gr diced bacon

200 gr smoked cured sausage

half red pepper

half yellow pepper

5 spring onions

2 garlic cloves

2 stalks of celery

2 tbs ground cumin

1 tbs oregan

1 or 2 red hot chilli pepper

salt

 

Slice the cured sausage. Fry it in 2 tbs of olive oil. Set aside (retain the oil).

In the same oil as above, fry the diced bacon.

Add the onions and garlic roughly chopped. Fry for a couple of minutes.

Add the celery (diced) and the minced hot chilli pepper. Fry for a couple of minutes.

Add the peppers (diced). Fry for a couple of minutes.

Now add the rice and let fry for 6 or 7 minutes sitrring.

Add cumin, half tbs of salt and oregan.

And add water to cover the rice. Keep stirring and add water if it becomes too dry. Cook as per cooking directions (usually 12-14 minutes). Season with salt again if necessary.

Serve sprinkling with the fried sausage on top.
