<p>Benvenuti in un viaggio meraviglioso nella Cina del sud. La prima volta che l’ho assaggiata era a Hong Kong, in quella occasione ho scoperto che si tratta di una zuppa estremamente rara da trovare oggi (richiede infatti moltissimo tempo ed è una ricetta da ristorante ormai).</p>
<p>Si sa che il brodo più buono è quello lasciato bollire per almeno 3 ore. Potete ora immaginare cosa possa accadere ad un brodo bollito per 6 ore? Magia per il palato e anche per gli occhi.</p>
<p>&nbsp;</p>
<p>4 cocchi (meglio se ancora acerbi)</p>
<p>600 ml di brodo di pollo*</p>
<p>4 cucchiaini di bacche di goji</p>
<p>4 mazzetti di funghi cinesi (shitake) oppure 4 funghi (tipo pleurotis)</p>
<p>&nbsp;</p>
<p>* Brodo di pollo</p>
<p>2 cosce di pollo a tocchetti da circa 2 cm l’uno (ossa incluse)</p>
<p>1 lt acqua</p>
<p>1 cipolla</p>
<p>(a piacere mezza carota e mezzo gambo di sedano)</p>
<p>1 cucchiaio di sale grosso</p>
<p>&nbsp;</p>
<p>*Preparare il brodo: tutto a freddo e lasciato sobbollire per 3 ore a fuoco basso.</p>

<p>Tagliare i cocchi a tre quarti della sua altezza aiutandosi con un seghetto, fino al taglio completo (la calotta superiore fungerà da coperchio). Versare l’acqua in un recipiente e procedere così con tutti cocchi.</p>

<p>In ogni cocco svuotato dalla sua acqua versare 2 pezzi di pollo cotto, un cucchiaino di bacche di goji, lo zenzero e i funghi (a seconda di ciò che avete trovato).</p>

<p>Riempire fino a metà con l’acqua di cocco e versare fino a 1 cm dal bordo il brodo di pollo filtrato. Chiudere con le calotte tutti i cocchi.</p>

<p>Posarli in una (o più) casseruola, capaci di contenerli. Versare nella casseruola acqua fino a metà del bordo dei cocchi e portare ad ebollizione. Abbassare il fuoco al minimo, coprire con un coperchio e cuocere così per 3 ore (controllare di tanto in tanto che l’acqua sul fondo non evapori completamente).</p>

<p>Estrarli dalla casseruola e lasciare a riposo 20 minuti prima di servire direttamente i cocchi al tavolo. La zuppa si gusta direttamente dal cocco con un cucchiaio.</p>

<p>Tritare finemente il pollo.</p>

<p>Soffriggere la cipolla, l’aglio, il peperoncino e lo zenzero tritati con l’olio.</p>

<p>Unire il pollo al soffritto. Salare e cuocere per 8/10 minuti (il tempo di cuocerlo senza che si asciughi troppo però).</p>

<p>Unire le sale (di soia e pesce) e il succo di lime. Saltare per un paio di minuti. Qualora fosse troppo asciutto aggiungere un po&#8217; di brodo o di acqua.</p>

<p>Unire il basilico a foglia piena (o tagliato grossolanamente). Cuocere per altri 2 minuti finché il basilico sarà appassito e servire immediatamente con riso a vapore.</p>

<p>mezzo bicchiere di vino bianco / <i>half glass of white wine</i></p>
<p>mezzo bicchiere di olio d’oliva / <i>half glass of olive oil</i></p>

<p>Soffriggere l’aglio con l’olio in una casseruola capiente.</p>

<p>Schicciare il pollo e incassare il petto. Metterlo nella padella con l’olio e l’aglio e lasciarlo dorare per 10-12 minuti girandolo di tanto in tanto.</p>

<p>Unire un cucchiaio di sale grosso e il pepe.</p>

<p>Aggiungere il brodo o l’acqua. Portare ad ebollizione e lasciare cuocere a fuoco basso per circa 1 ora. Controllare la cottura e togliere dal fuoco. Servire intiepidito con il suo brodo e le sue verdure. A me piace inzuppare il pane ma potete anche sevrirlo con riso al vapore.</p>
<p><i>Add hot stoke or the water. Bring to boil and let simmer for 1h (low heat). Check doneness and set aside. Serve warm with its own broth and vegetables (I love to drench bread with it), or you could serve it with steamed rice.</i></p>

<p>Mettere tutto nel macinacaffé (o in un mortaio qualora non aveste il macinacaffè) e macinare tutto assieme e proseguire con la ricetta.</p>

<p>Miscelare le spezie Cajun con l’olio e i limone  per ottenere una crema semiliquida, in caso aggiungere un cucchiaio d’acqua. Coprire le fettine di pollo e fare aderire bene la salsa. Mettere a macerare in frigorifero per almeno 1 ora.</p>

<p>Comporre la chicken coconut soup nel piatto: mettiamo i vermicelli in una ciotola, e versiamo la zuppa sopra sui lati. Servire caldissimo aggiungendo il coriandolo.</p>

<p>70 ml salsa di soia</p>
<p>1/2 cucchiaino di peperoncino macinato</p>
<p>acqua q.b.</p>
<p>succo di lime</p>
<p>facoltativo: aglio in polvere da aggiungere alla marinata</p>

<p>Mescolare tutti gli ingredienti in un recipiente, unire acqua quanto basta per ottenere una salsa densa e cremosa.</p>

<p>600 gr di petto di pollo</p>
<p>1/2 cipolla</p>
<p>2 spicchi d’aglio</p>
<p>2 cm di zenzero fresco</p>
<p>1/2 banana</p>
<p>1/2 mela</p>
<p>1 cucchiaio di farina</p>
<p>sale e pepe</p>
<p>3 cucchiai abbondanti di curry</p>
<p>400 ml di latte di cocco</p>
<p>acqua (o latte) q.b.</p>
<p>350 gr riso (basmati)</p>
<p>&nbsp;</p>
<p>Tagliare il pollo a cubetti.</p>
<p>Mettere 3 cucchiai d’olio in una casseruola e soffriggervi la cipolla, l’aglio e lo zenzero tritati (l’aglio lo si può anche lasciare intero ed estrarre a soffritto avvenuto).</p>

<p>Unire il curry e fare ravvivare le spezie nell’olio e negli aromi per un paio di minuti.</p>

<p>Unire la banana schiacciata con una forchetta e la mela tagliata a piccoli tocchetti.</p>
<p>Amalgamare il tutto.</p>

<p>Unire il pollo velocemente spolverato di farina. Fare insaporire il tutto per una decina di minuti mescolando bene. Unire il latte di cocco e acqua o latte (1 bicchiere) fino a coprire la carne. Coprire e lasciare sobbollire mescolando di tanto in tanto fino ad assorbimento.</p>

<p>A parte cuocere il riso. Sciacquare 350 gr di riso (meglio se basmati) sotto acqua corrente. Metterlo in una casseruola e coprirlo con 2 cm d’acqua. A fuoce medio portare a ebollizione coperto. Quando inizia a sobbollire mettere il gas al minimo e lasciarlo cuocere per il tempo necessario (dai 12 ai 15 min), fino all’assorbimento totale dell’acqua.</p>
<p>Servire caldissimo.</p>

<p>200 gr insalata mista</p>
<p>1 cipolla rossa</p>
<p>4 gambe di sedano bianco</p>
<p>16 noci</p>
<p>1 pescanoce</p>
<p>400 gr petto di pollo a fette*</p>
<p>2 cucchiai di senape</p>
<p>sale e pepe</p>
<p>* potete sostituire il pollo con gamberi o calamari cotti nello stesso modo</p>

<p>Condimento:</p>
<p>4 cucchiai aceto di riso o di mele</p>
<p>6 cucchiai olio d’oliva</p>
<p>2 cucchiai di senape</p>
<p>sale e pepe</p>

<p>Cospargere  il pollo con la senape, sale e pepe. E grigliarlo.</p>

<p>Tagliare la pesca, il sedano, la cipolla e l’avocado a fettine sottili.</p>

<p>Ora mettere le pesche, la cipolla e il sedano in un recipiente assieme all’insalata.</p>

<p>Preparare il condimento, in un tazza mettere tutti gli ingredienti e sbattere con una frusta, versare sull’insalata e mescolare bene.</p>
